Pecan, Cranberry and Banana Oatmeal recipe that is ready in 10 minutes. With cinnamon and coconut added, it tastes like fall in a bowl.
Trying hard to space out my oatmeal posts because I am freaking obsessed.
Even in the summer, is my breakfast of choice. No matter that it is blisteringly hot outside. I need my oatmeal fix.
Keep in mind, this is coming from an ex-oatmeal hater.
I think the reason I hated oatmeal so much was because I never even thought of putting toppings on it.
If this sounds like you, toppings are everything!! You are not allowed to tell me you hate oatmeal until you have tried it with at least 2 toppings or mix ins. Otherwise we can’t be friends.
And oatmeal friends are for LIFE.
(Not a thing. Totally made that up.)
(But maybe could be a thing.)

I have been making this version of oatmeal for years, but I thought it was far too easy to share.
But then I remembered that I had to google how to make oatmeal once. So we all gotta start somewhere.
And bonus: this one uses only one ripe banana!

I was going to wait until the fall to share this recipe. It has all the autumn favourites: cinnamon, cranberries, pecans.. But I just had to share now. One: because I didn’t have another recipe to post (#foodbloggerfail), and two: well.. this has been my breakfast for the past few days, so I know someone out there might be craving the same thing.
Feel free to switch up the toppings to your liking. I love the sweet and crunchy combo of dried cranberries and pecans, but If you are craving some fresh fruit or something more seasonal, then go right ahead.

Pecan, Cranberry and Banana Oatmeal
Ingredients
- 1 medium banana, mashed
- 1/2 cup rolled oats
- 1/2 cup milk of choice
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1 tsp unsweetened shredded coconut
- 2 tsp dried cranberries
- 2 tsp pecans, chopped
Instructions
- In a small saucepan, mix together the banana, oats, milk and cinnamon. Heat on medium heat until thickened, around 5 minutes.
- Pour into a bowl, and top with coconut, cranberries and pecans.
