These Vanilla Protein Powder Pancakes are made with whey protein powder. Can be made vegan, these pancakes are super fluffy and easy to make.

Yeah, that was two months ago. The fact is, I am still trying to catch up on writing down my posts, editing photos and all that other fun stuff, while at the same time update my website in this new format.
Yeah, I know. Boring stuff. I swear, this will be the last time I will talk about it. Because all I want to talk about right now are these pancakes.
Ever since I posted that picture on Instagram, I have been making these pancakes almost on a regular basis. I actually just finished a plate of these pancakes this morning. My reward after my 6:30 AM gym session.
All the while when I was at the gym, I was thinking about these pancakes. I would like to say they made me work harder, but who knows.
Can you believe how fluffy these pancakes are without any eggs? Whenever I think of eggless pancakes, I think of a flat, almost slimy texture pancake. I think that was what my first experience making eggless pancakes was like, and I have avoided it ever since. Until now!
These can actually be made vegan if you switch the protein powder to a vegan type (my vegan friends tell me this one is good, but I have yet to try it).
These vanilla protein powder pancakes also freeze very well. Just allow to cool on wire racks, put them in a freezer bag and place in your freezer. So when you are on the run, but also want some pancakes for breakfast, all you need to do is pop them in your toaster and boom! Instant pancakes. And homemade too!
And for the final touch: toppings! Top these pancakes with your favourite topping. Since it’s summer, I have been topping them with both fresh and frozen berries and some maple syrup drizzled on top. But these pancakes are pretty classic, so any topping would work, from fruit to chocolate.
Just curious, what is your favourite topping? I am always looking for some unique suggestions.
Vanilla Protein Powder Pancakes
Ingredients
- 1 cup all-purpose flour
- 1/4 cup vanilla protein powder
- 1 Tbsp baking powder
- 1/2 tsp salt
- 2 Tbsp pure maple syrup
- 1 cup water
Instructions
- In a medium bowl, mix together all of the ingredients until smooth.
- Heat a skillet on medium heat, and lightly grease the pan. Scoop 1/3 cup of batter onto the hot skillet and cook until bubbles appear on the top. Flip the pancake over, and cook the other side for an additional minute, or until the side is golden brown.
- Repeat with the remaining batter.

I am not sure why, that has never happened to me. Maybe try using less baking soda and see how it tastes

I have never tried it with either, but I believe it should work!! You may need more liquid, or to reduce the amount of those types of flour

Hi! Just made these tonight, delicious! I tried clicking on your nutrition info for these but it’s not available, error 404. I saw you answered someone else that the recipe serves 2-4. Using the 1/3 cup measure, it made 6 pancakes. So did you figure out 279 cal per 3 pancakes? Just trying to keep my tracking in check! Will definitely make again, trying different protein powder flavors! I only had a sample of vanilla flavor, I usually get a chocolate peanut butter or a salted caramel flavor! I did leave out the syrup and added that on the plate, didn’t miss it in the actual pancake for those who were asking.
