Easy Air Fryer Potato Wedges recipe. When you want fries in under 15 minutes, these quick and simple potato slices are for you!
John bought me this air fryer for my birthday back in January, and this is the first recipe that I am posting using the air fryer.
It only took 9 months.
To be fair, I have been using my air fryer. A lot. But most of the time it is to make things like frozen bagel bites and frozen chicken nuggets. Until now.
I’ve heard that making Air Fryer Potato Wedges is sort of difficult. Just because you risk having undercooked potatoes with a crispy interior.
And yes, I have indeed had my share of that when I was recipe testing this Air Fryer Potato Wedges recipe. But I think I got it right this time!
What do you need to make these Air Fryer Potato Wedges?
You really don’t need much at all. All you need is:
- russet potatoes
- olive oil
- herbs de provence
- ground pepper
That’s it!
I don’t add salt to this recipe because I know that everyone in my family likes their own amount of salt. John DRENCHES his potato wedges in salt, whereas my mom doesn’t like salt on her potatoes at all. Then there is me. I think I put a reasonable amount on mine. But it really is subjective, put as much or as little as you like!
I don’t have a potato wedge recipe on my blog for those of you that don’t have an air fryer, but my Roasted Potatoes, Carrots and Beets never fails to be a crowd pleaser. Try that one out, or buy an air fryer. Because I promise you, it will be worth it for this recipe alone.

Air Fryer Potato Wedges
Ingredients
- 2 large russet potatoes, cut into thin wedges
- 2 Tbsp olive oil
- 1/2 tsp herbs de provence
- 1/4 tsp ground pepper
Instructions
- Preheat the air fryer to 400˚F.
- Mix together all of the ingredients in a large bowl.
- Place the potato wedges on a single layer in your air fryer. You may need to do a couple of batches.
- Air fry for 10 minutes. Remove and repeat for the remaining wedges.
Notes
- You can also flip the potato wedges halfway through cooking. Personally, I like the different textures on both sides, but do what you prefer.
- Best enjoyed immediately.
