I’ve been too busy relaxing and exploring Hawaii for my honeymoon that I have neglected to post on this blog. Forgive me just this once, will you 😉. How about if I bribe you with these Almond Butter Chocolate Cups? Will that work?
It is so hot in Hawaii, I would make these right about now if I had all of the right ingredients and the right equipment. I promise, if I end up in an Airbnb with a muffin pan, I will buy the 3 simple ingredients needed to make these Almond Butter Chocolate Cups and make them as soon as I get back. They are so good, and so easy to make!
I made these more times than I can count in Toronto, but wanted to save the recipe for when it got SUPER hot, and everyone is looking for no bake desserts. This is the one for you.
And it is so versatile too! Last time I made these as a dark chocolate cup and it was fantastic. The possibilities are endless!
I actually have some of these waiting for me in the freezer in Toronto, which I am so excited to eat upon my return.
But since this honeymooning and relaxing is basically my full time job right now, I may not post for a while. Or until I return to Toronto in a couple of weeks. Almond Butter Chocolate Cups Ingredients
This recipe uses minimal ingredients, so there is no excuse NOT to make it! All you need is:
- chocolate chips – milk chocolate or semi-sweet chocolate chips work well
- coconut oil – ghee or cocoa butter work as well
- creamy almond butter – or any nut butter you like
Equipment
- standard muffin tin
- silicone muffin liners (paper cupcake liners also work)
- microwave-safe bowl
Tips
Storage: Store almond butter cups in an airtight container in the fridge or freezer. I wouldn’t recommend keeping them at room temperature, as the chocolate could melt.
Make Dark Chocolate Almond Butter Cups. If you love rich dark chocolate, this is perfect for you! When making the dark chocolate shell, just follow the recipe card except replace the chocolate chips with dark chocolate chips.
Swap out the almond butter. While I love the flavor of a smooth nutty almond butter cup, you can replace it with any nut butter you like. I personally love to use cashew butter or peanut butter for the almond butter layer. But you can also use crunchy almond butter (or make a homemade almond butter) if you wanted more of a crunch.
Make a nut-free version. If you are allergic to tree nuts, replace the almond butter mixture with sunflower seed butter.
Do a mini version. While I love the large cups, you may just want a little snack. In that case, place a mini muffin cup in each cavity of a mini muffin pan. Place around 1 teaspoon of melted chocolate into the bottom of each muffin liner then a small dollop of almond butter on top. Divide the remaining chocolate on top.

Almond Butter Chocolate Cups
Ingredients
- 1 cup chocolate chips
- 1 Tbsp coconut oil
- 6 Tbsp almond butter
Instructions
- Line a muffin pan with 6 silicone muffin cups. Set aside.
- In a microwave safe bowl, melt the chocolate chips and coconut oil in 30 second intervals in the microwave, mixing until smooth.
- Divide half of the chocolate mixture evenly in the prepared muffin tin. Using a teaspoon, draw some of the chocolate up on the sides of the silicone cup. Place in freezer to harden, around 5-10 minutes.
- Drop 1 tsp of almond butter in each cup and press down with the back of a spoon. Top with the remaining chocolate and place in the freezer until hardened.
