Apple crisp for one 🍏🍎.

Trying to assimilate into Wisconsin culture by buying my @dinnerbellcreamery butter from @kwiktrip to support local dairy farmers. 🐄

▪️1 medium apple, sliced
▪️1 Tbsp flour
▪️2 Tbsp brown sugar
▪️1 Tbsp butter
▪️2 Tbsp old fashioned oats
▪️1/4 tsp ground cinnamon

Preheat oven to 350F. Place apple slices in ramekin. Mix flour, brown sugar and cinnamon together in a small bowl. Cut in the butter until it resembles coarse crumbs. Mix in oats. Bake in oven for 35-40 mins.

One of my favorite fall versions of banana bread: PUMPKIN BANANA CHOCOLATE CHIP BREAD 🎃

▪️3 medium ripe bananas
▪️1 large egg
▪️2/3 cup pumpkin puree
▪️1 tsp vanilla extract
▪️5 Tbsp butter, melted
▪️1/3 cup brown sugar
▪️1 1/2 cups all-purpose flour
▪️1 tsp baking soda
▪️1/2 tsp baking powder
▪️1/2 tsp salt
▪️2 tsp pumpkin pie spice
▪️1 cup chocolate chips

1. Preheat the oven to 350°F. Line a loaf pan with parchment paper and set aside.
2. In a large bowl, mash the bananas. Mix in the egg, pumpkin, butter and sugar until fully combined.
3. In a separate bowl, mix together the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
4. Pour the batter into the prepared loaf pan and place in the preheated oven for 55-65 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan before serving.

CAKE MIX MUMMY CAKESICLES for a cute and easy Halloween recipe idea 🎃👻

▪️1 box white cake mix
▪️1/2 cup frosting
▪️1 1/3 cup white chocolate chips
▪️2 Tbsp coconut oil
▪️candy eyeballs

1. Bake the cake according to package instructions. Allow to cool completely.
2. Using a stand mixer, mix together the cooled cake and the frosting until fully combined. Set aside.
3. Place the white chocolate chips and the coconut oil in a microwave safe bowl and microwave in 30 second intervals, mixing until smooth.
4. Using the back of a spoon, coat a silicone popsicle mold with a layer of the white chocolate mixture. Place in the freezer to harden.
5. Once hardened, press the cake mixture into the molds. Top with a layer of the white chocolate mixture and return to the freezer.
6. Once hardened, remove from the silicone molds and drizzle with the remaining white chocolate mixture. Place two candy eyeballs on each cakesicle and return to the freezer or fridge until hardened.

We are clearly team apple in our house when it comes to fall flavours. This Snickerdoodle Apple Bread one of my favourite ways to use up my apples 🍎

Bread
▪️1/2 tsp salt
▪️1 1/2 tsp baking powder
▪️1 1/2 cups all-purpose flour
▪️1/2 Tbsp ground cinnamon
▪️1/2 cup salted butter, softened
▪️1 cup brown sugar, packed
▪️1/4 cup granulated sugar
▪️2 large eggs
▪️1 Tbsp vanilla extract
▪️1/2 cup milk
▪️1 large apple, diced
Topping
▪️2 Tbsp granulated sugar
▪️1 tsp ground cinnamon

1. Preheat the oven to 350°F. Lightly grease a loaf pan and set aside.
2. In a medium bowl, mix together the salt, baking powder, flour and cinnamon. Set aside.
3. In the bowl of a stand mixer, cream together the butter and both the sugars until light and fluffy. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla.
4. Alternate between mixing in the dry ingredients and the milk into the sugar mixture until just combined. Fold in the apples.
5. Pour the batter into the prepared baking pan and set aside.
6. In a small bowl, mix together the topping ingredients. Sprinkle on top of the batter.
7. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted comes out clean.
8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

▪️16 oz strawberry frosting
▪️12 oz white chocolate chips

1. In a large microwave safe bowl, microwave the frosting and white chocolate chips in 30 second intervals, mixing until smooth.
2. Line an 8x8 baking pan with aluminum foil. Pour the mixture on top, smoothing it out with a rubber spatula.
3. Place in the fridge until firm, around 2-3 hours.
4. Cut into pieces. Place in an airtight container and store it in the fridge for up to 5 days.

▪️1/2 cup salted butter, softened
▪️1 cup brown sugar
▪️1 large egg
▪️2 tsp vanilla extract
▪️1 1/2 cup all purpose flour
▪️1 Tbsp baking powder
▪️1 tsp ground cinnamon
▪️3/4 cup milk
▪️2 medium apples, cored and cut into slices
Cinnamon Sugar
▪️1/4 cup granulated sugar
▪️1 tsp ground cinnamon

1. Preheat the oven to 350℉. Lightly spray a 9 inch round cake pan with cooking spray and set aside.
2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Mix in the egg and vanilla.
3. In a medium bowl, mix together the flour, baking powder and cinnamon.
4. Alternate between mixing the flout mixture and milk into the butter mixture. Mix until just combined.
5. Pour the cake batter into the prepared baking pan. Arrange the apple slices over top in a spiral formation.
6. In a small bowl, mix together the cinnamon sugar ingredients. Sprinkle over the top of the cake.
7. Bake the cake in the preheated oven for around 50 minutes, or until a toothpick inserted into the center comes out clean.

The best part about this salad is that I don’t need to wash the @80acresfarms lettuce 😅 why is that my least favourite part of making a salad?

To make this RICE AND BEAN SALAD 🥗👇

▪️1 Tbsp oil
▪️1 cup frozen corn
▪️1 small onion, chopped
▪️2 cloves garlic
▪️2 tsp chili powder
▪️1 tsp cumin
▪️1 can black beans, drained and rinsed
▪️4 cups cooked rice
▪️1/2 cup salsa
▪️6 cups @80acresfarms butter lettuce
▪️1/4 cup cheese

Heat the oil in a large skillet. Cook the corn and onion for 4 mins, then mix in the garlic, chili powder and cumin. Cook for another minute. Mix in the beans, rice and salsa and cook until warm. Serve over some lettuce and top with cheese.

Dough
▪️1/2 cup all-purpose flour
▪️1/2 cup whole wheat flour (or another 1/2 cup of all-purpose)
▪️1/2 cup brown sugar
▪️1 cup salted butter, softened
Cheesecake Filling
▪️16 oz cream cheese, softened
▪️1/2 cup granulated sugar
▪️1 tsp vanilla extract
▪️2 large eggs
Apple Filling
▪️3 small apples, peeled and cut into cubes
▪️1/2 tsp ground cinnamon
▪️2 tsp granulated sugar
Crumb Topping
▪️1/2 cup oats
▪️1/2 cup brown sugar
▪️1/2 cup salted butter, softened
▪️1/2 cup all-purpose flour
▪️1/2 cup whole wheat flour

1. Preheat the oven to 350˚F.
2. Place the dough ingredients in a food processor, and process until mixture resembles coarse meal.
3. Press the dough evenly into a 13×9 inch baking pan with edges, and bake for 15 minutes, or until lightly browned.
4. In the meantime, in a larger bowl, beat together the cream cheese and 1/2 cup white sugar until smooth. Add in the eggs one at a time, beating around 20 seconds after each addition. Next add the vanilla and mix until combined.
5. Pour the cream cheese mixture over the warm crust.
6. In a medium bowl, mix together the apple filling ingredients. Spoon evenly over the cream cheese mixture.
7. In the same bowl, mix together the oats, butter and flours. Add in the butter, and mix with a fork until the mixture looks like coarse meal. Sprinkle over the cream cheese mixture. Sprinkle the 1/2 cup brown sugar over the oat mixture, and bake for 30 minutes, or until the filling is set. Remove from oven and allow to cool completely.
8. Cut into squares and enjoy! Store in the refrigerator.
