Can you believe it’s the first day of fall?? I was looking forward to this day for MONTHS!
Bring on all the pumpkin recipes! And, of course, everything apple!
Call me crazy, but a couple of days ago I bought 6 POUNDS of apples. This might not seem weird for an entire family, but considering it is just me and my boyfriend…well let’s just say that I’m glad we both like apples.
And I’m also glad I like baking! Because God forbid I get sick of eating actual apples before fall even begins. Curse my impulse apple buying.,,
So just when I thought I have made every banana bread combination imaginable (life goals!), I realized that I have neglected to pair banana with my favorite fruit. The HORROR!!
This banana bread might be my new favorite breakfast idea. I know I say this a lot, but this one is special in its own way. One of the reasons I love this banana bread is that I always have all of the ingredients on hand. That is, except for the walnuts, but those are totally optional. Next time I make it, I will probably omit them, because my snacking on walnuts is getting out of CONTROL!
Same goes with my banana bread snacking. Somebody hold me back!
Apple Banana Bread
Ingredients
- 1/2 cup salted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 3 Tbsp plain yogurt
- 2 medium ripe bananas, mashed
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 2 medium apples, shredded
- 1/2 cup walnuts, chopped (optional)
Instructions
- Preheat the oven to 350˚F. Lightly spray a loaf pan and set aside.
- In a large bowl, cream together the butter and sugars until light and fluffy. Mix in the eggs one at a time until fully incorporated. Add in the yogurt, banana and vanilla, and mix until fully combined.
- In a separate bowl, mix together the flour, baking powder, baking soda and cinnamon. Slowly add in the dry ingredients to the wet ingredients until just combined.
- Fold in the apples and walnuts. Pour the batter into the prepared pan and bake in the preheated oven for 1 hour, or until a toothpick inserted in the center comes out clean.

I adore banana bread with walnuts. Adding apples is not something I've ever thought of. Great idea and so seasonal!
