Easy Apple Coffee Cake on the menu today.
I just had some extra sour cream and some apples that needed to be used, and thought: why not bake with it? Which, you know, is pretty much my first thought when I have ANYTHING extra lying around that needs using.
Ever since I’ve been informed that some of the foods that are sold in stores contain wood pulp, I have started making my own food. One, because I know what I’m putting in it, and two, because I still think that baking is fun. Maybe it will wear off sometime. I really hope not..

What you’ll need:
-1/2 cup butter, softened
-1 cup white sugar
-2 eggs
-1 teaspoon vanilla extract
-2 cups all-purpose flour
-1 teaspoon baking powder
-1 teaspoon baking soda
-1/2 teaspoon salt
-1 cup sour cream
-2-3 small apples, cored, peeled and cut into cubes
-3/4 cup brown sugar
-2 1/2 teaspoons butter, melted
-1 teaspoon ground cinnamon
Directions:
1. Preheat the oven to 350˚F
2. In a medium bowl, cream together 1/2 cup butter and sugar until light and fluffy. Add the eggs and vanilla and mix well.
3. In a large bowl, combine the flour, baking powder, baking soda and salt. Slowly add the wet ingredients and the sour cream until fully incorporated. Fold in apples.
4. For the topping, mix together the 2 1/2 teaspoons of melted butter with the brown sugar and cinnamon.
5. Pour batter into a springform pan, sprinkle the topping on top, and bake for around 20 minutes, or until a toothpick inserted comes out clean

this reminds me of the rhubarb coffee cake my mom makes every year, but the great thing about your recipe is that it uses apples instead of rhubarb! 🙂 I can't wait to try this!

Agree! Cooking at home is much healthier, cheaper, and taste so much better. I like to know what's in my food too, wood pulp is definitely not something I wanna ingest in my system.
