Why has it been so long since the last time I made pancakes??
Pancakes used to be a Saturday morning tradition at my house. The reason being: I am such an early riser. When everyone in my family was upstairs, sleeping off their long week, I couldn’t help waking up before 7 AM like I do every morning. So after a couple of hours, when everyone slowly started waking up, I would get a phone call from my mom telling me to start making pancakes. And I would happily oblige.
There is something so therapeutic about making pancakes in the morning. Maybe it’s the feeling of accomplishing something: creating something delicious that can be consumed immediately. Or maybe it’s because having a pancake breakfast goes hand in hand with having the day off. Relaxing. Drinking tea and reading the rest of the day. That’s my idea of a good time!
Another idea of a good time is buying so many apples that I can’t possibly eat them all. Yup. That is me every time I go to the grocery store. So what is my solution? Put them in pancakes!
Okay, sure. Thursday isn’t really a pancake making day. But I am too excited about this pancake recipe to wait until the weekend! You can always save it for later. But because of the way my school calendar works, I get Thursdays off, so this is the perfect time for me to share my pancake adventures. And these ones might be one of my new favorites.
They are soft and fluffy, and have bits of apple littered inside each pancake to surprise you at every bite. And the pancake itself is like eating a little piece of fall, even though fall is long gone.
Apple Pie Pancakes
Ingredients
- 1 cup all-purpose flour
- 2 Tbsp brown sugar, packed
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup milk of choice
- 1 large egg
- 1 Tbsp salted butter, melted
- 1 tsp vanilla extract
- 1 medium apple, peeled and shredded
Instructions
- In a medium bowl, mix together the flour, brown sugar, baking powder, cinnamon and nutmeg.
- In a small bowl, mix together the milk, egg, butter and vanilla extract until fully combined.
- Add in the wet ingredients to the dry ingredients, and mix until just combined. Fold in the apples.
- Heat some oil on a skillet. Using a 1/3 cup measure, scoop batter onto the warm skillet. Cook for 1-2 minutes until small bubbles form on the surface, then flip and cook the other side for 1 minutes.
- Transfer the pancake to a plate, and repeat the process for the remaining batter.

I love the idea of shredding the apple. If you left the peel in, do you think it'd be noticeable? I like eating the peel.

I think it depends on the apple. I tried it once with this really waxy apple and it was super noticeable. After that incident, I peeled all my apples when making pancakes. But I do like eating the peels after peeling 🙂

I make pancakes whenever our grandsons sleep over. I will definitely try putting some grated apple in next time! Sounds delicious.
