This Applesauce Cake is made with pecans and cranberries. The perfect dessert or breakfast recipe for the fall.
Okay, here we go. Let the fall baking begin.
Maybe if I start baking like fall, the weather here in Toronto will start ACTING like fall. Seriously! There was a heat warning yesterday, and another one today. I actually spent all day yesterday making Vanilla Bean Ice Cream in preparation of this hot weather.
And the ice cream pairs quite nicely with this Applesauce Cake, if I do say so myself.
I couldn’t decide whether or not to call this a cake, or to put it into a loaf pan and call it bread. Because what’s the diff, really? But since I want to be decadent after not one but TWO savoury posts in a row (who am I??) I am naming it a cake.
A cake I ate for breakfast almost every day this past week.
Okay, so maybe this Applesauce Cake recipe isn’t QUITE the “in season” fall recipe I was promising you. Instead of using fresh apples, I am using applesauce from a jar. Not even homemade. But I always make it a point to have a jar at home at all times.
However, if you are a DIY kinda person, feel free to make the applesauce yourself, then add it to this cake.
I’m looking at you mom. I grew up on my mom’s homemade applesauce and have been too afraid to try to recreate it. What if it turns out to be a disaster? What if I make it wrong and turn myself off applesauce forever? Store bought applesauce is too cheap to pass up, that the trade off for making my own seems small.
But one day!
I could have just left good enough alone. Left the applesauce cake without any add ins. But since it is fall, and almost Thanksgiving (for us Canadians at least), I wanted to add all the fixings to make it feel like Thanksgiving in a cake.
The pecans give this cake a wonderful crunch, and the cranberries give little bursts of sweetness that can’t be beat. Not going to lie, I DID eat this cake for breakfast and lunch of the same day. But it is so big, I am afraid it will go mouldy in the heat!
Yes, I know there is my fridge, but I need my excuses. Don’t ruin this for me! 😉

Applesauce Cake
Ingredients
- 1/2 cup salted butter, softened
- 1 cup granulated sugar
- 1 cup applesauce
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp cloves
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
Instructions
- Preheat the oven to 350˚F. Lightly grease an 8x8 inch square pan and set aside.
- In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add in the applesauce and mix until fully combined.
- In a separate bowl, mix together the flour, baking soda, cinnamon and cloves. Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the cranberries and pecans.
- Pour the batter into the prepared pan, and bake in the preheated oven for 40 minutes, or until a toothpick inserted comes out clean.
Notes
- Cake can be stored in an airtight container for up to 5 days.

😁Hahaha…I feel your fear of making applesauce, I also buy applesauce in a jar, but its on my bucketlist to try an make it….waaaaaaay down at the bottom of the list. I guess it is just too easy to get it from the store.
Anyway I am loving this recipe, Definitely makes a great comforting breakfast!!

Try applesauce in a slow cooker, seriously you don’t even need to peel the apples! Just cut, dump turn on and leave for hours. Your cake sounds perfect to me with all the add-ins and spices. I too would struggle to leave it alone and would eat it several times during the day.
