The weather has finally started to cool down in Chicago, and all I want now is comfort food.
Give me all the soups, pastas, pizza… you name it. I’m eating it all.
And now I am hooked on this Bacon and Broccoli Casserole.
What do you need to make this Bacon and Broccoli Casserole?
Anything I make these days uses very few ingredients, and this recipe is no exception. All you need is:
- broccoli
- carrots
- cream cheese
- milk
- garlic powder
- cheese
- breadcrumbs
- bacon
That’s it!
I’m pretty sure that I’m going to be making casseroles almost daily from now until the end of the year.
When you mix in my super busy teaching schedule with the fact that I will have a baby in less than 2 months (!!!) I am all about the quick and easy recipes. So I know that I am going to be making this Bacon and Broccoli Casserole on repeat.

Bacon and Broccoli Casserole
Ingredients
- 2 bunches broccoli, chopped
- 2 medium carrots, diced
- 8 oz cream cheese, softened
- 2 Tbsp milk
- 1 tsp garlic powder
- 1 cup cheddar cheese, shredded
- 1/3 cup bread crumbs
- 1/3 cup bacon, cooked and crumbled
Instructions
- Preheat the oven to 425˚F.
- In a medium saucepan, steam the broccoli and carrots until crisp tender, around 2-3 minutes. Remove from heat and set aside.
- In a large bowl, mix together the cream cheese, milk, garlic powder and cheese. Mix in the cooked vegetables.
- Pour the vegetable mixture into a 9 inch square baking pan and top with the breadcrumbs and bacon.
- Bake in the preheated oven for 20 minutes.

This casserole is soo cheesy and delicious! Served it for dinner with some roasted potatoes and it was a huge hit! I love easy meals like this.
