Baked Jalapeno Macaroni and Cheese made with cheddar and mozzarella cheese, and made rich with evaporated milk. Quick and easy dinner recipe.
I know. This Baked Jalapeno Macaroni and Cheese marks another dinner recipe. How uncharacteristic of me.
But with the summer off, dinners are now placed on my shoulders.
Make no mistake, I am not complaining in the least. Two entire months of no work, and all I need to do is make dinner? Yeah, I think I like this deal. I like it a lot.
The best part about making dinner is the fact that you have complete control. And if someone doesn’t like it… yeah well too bad. You should have made dinner then!
I’m sure that won’t work if I had kids, but when it is just me and my fiance, I will give him as much attitude as I like.
And just saying, he is one of the pickiest people I have ever met.
Which is why he is marrying me. 😉 But jokes aside, it is often difficult to make something for dinner that he actually likes. Right now, all he wants to eat is my One Pot Cheesy Chicken Pasta.
The other night for dinner, I had such a huge recipe FAIL.
Okay, it wasn’t really a fail because I actually liked it, but anyone who hates onions would NOT like it. It was pizza. Freaking PIZZA! How can you go wrong with that?
Apparently I did. My fiance didn’t tell me to my face that he didn’t like it, he kind of just tried picking out the onions.
So when I go and pack some leftover pizza for his lunch the next day, he goes: yeah. I think I’m going to buy my lunch today.
So I guess I’m not making that again.
But one dinner that most picky eaters can’t resist is mac and cheese. For real, how many mac and cheese haters do I have out there? Apart from my brother who hates cheese, I don’t know anyone. Seeing as how basically all kids menus out there have some version of mac and cheese on it, I thought that this was a safe bet.
The addition of jalapenos was 100% because I have some fairly wilted looking jalapeno peppers in my fridge that needed using. I have tried this recipe without them and it is just as good.
If you wanted to make this Baked Jalapeno Macaroni and Cheese a little bit lighter, you can reduce the cheese and replace some of the condensed milk with lighter milk. It is a great base recipe, and have made it countless times. And I hope you do the same!

Baked Jalapeno Macaroni and Cheese
Ingredients
- 3 cups elbow macaroni
- 4 Tbsp salted butter
- 2 cans evaporated milk
- 1/3 cup milk of choice
- 2 large eggs
- 1/4 tsp garlic salt
- 4 cups cheddar cheese, shredded
- 2 cups mozzarella cheese, shredded
- 3 large jalapenos, cut into coins
- 1 tsp paprika
Instructions
- Bring a large pot of water to a boil. Add salt and macaroni, and cook until al dente. Drain and return to the pot. Add in the butter and stir until the butter is melted. Set aside.
- In a large bowl, mix together the evaporated milk, milk, eggs and garlic salt until fully combined. In a separate bowl, mix together the cheeses and the jalapeno peppers.
- Preheat the oven to 375°F. Lightly spray a 9×13 inch baking pan.
- Layer 1/3 of the macaroni, then 1/3 of the cheese. Repeat with the remaining macaroni and cheese mixture. Pour the milk mixture over top. Sprinkle the paprika evenly on top.
- Bake in the preheated oven for 25-30 minutes.
Notes
- You can switch up the cheese with whatever you have on hand.
