
Am I oatmeal crazy? Because in my opinion, that oatmeal crazy may just be the best kind of crazy.
Now before you all go oatmeal bashing, I think that you shouldn’t judge this plain Jane breakfast until you have tried it baked.

I have been making so many oatmeal recipes on my blog when I noticed that I haven’t actually made just a plain, no frills, baked oatmeal. So this recipe is definitely way past due.
Plus, now I can pretend to be one of those bloggers that preps all their meals for the week. I definitely want to be that blogger..
Though this is not my favorite oatmeal (which is currently my ginger nectarine baked oatmeal).
This recipe (unlike my favourite oatmeal recipe above) can be made year round. And I really hope you make it year round. I certainly will! It is a solid, no fail breakfast.

Okay, actually maybe not no fail. The first time I made this, I forgot to add the sugar. Biggest mistake ever. It tasted awful!
So let’s clarify this recipe, so that you don’t make it wrong like I did. All you need is:
- oats
- brown and white sugar
- milk
- butter
- egg
- baking powder
- salt
- vanilla extract
- cinnamon
That’s it! So simple, and so delicious.

Baked Oatmeal
Ingredients
- 1 1/2 cups rolled oats
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 3/4 cup milk
- 1/4 cup salted butter, melted
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350°F.
- Mix all of the ingredients in a bowl until well combined. Pour into an 8×8 baking dish and smooth the surface.
- Bake in the preheated oven for 20-25 minutes or until golden brown on top.
I adore baked oatmeal too. I could eat them every single meal and every day if they were so loaded with carb. This looks great, Cathleen.

Baked Oatmeal is such a great thing to have on hand when you want breakfast, a snack or a dessert. There’s just womething comforting about oats especially when they are baked. I’d take this and top it with a dollop of vanilla bean ice cream and some raspberries.

My family LOVES oatmeal, so I make it frequently, but I’ve never tried making it this way. I can’t wait to try it. One question: Have you ever made this with steel cut oats? That’s usually what we have on hand in our pantry… I’m wondering if I soak them for a while first if they might work in there?

Yum! Oatmeal is one of my favorite warm breakfast dishes and this recipe looks like the perfect way to eat it because you get all the lovely soft insides and a bit of crispy edge to make this feel more like a dessert treat for breakfast!
