Easy Baked Parmesan Summer Squash recipe. A healthy nut free side dish that kids and adults will love! Ready in under 30 minutes.
Summer is almost here, and so is the summer squash!
Thanks to my Imperfect Foods orders every week, I have been trying out new vegetables regularly.
This past week I got a summer squash so I thought that this recipe for Baked Parmesan Summer Squash would be fitting to make.
Plus it is so easy to make! All you need is:
- summer squash
- garlic powder
- salt & pepper
- Parmesan cheese
That’s it!!
My husband is usually a little wary of when I use vegetables that he doesn’t typically like when I am cooking.
Take for example my Breadcrumb Brussels Sprouts recipe. Before I made those, he was insistent on the fact that he cannot tolerate eating Brussels sprouts. But now? They are probably my most requested side dish from him. He totally converted to team Brussels sprouts.
I wanted to do the same with summer squash.
This recipe can honestly be made with whatever squash you have on hand.
And the verdict with the husband? Let’s just say that I’m going to be making this recipe a whole lot more these days.

Baked Parmesan Summer Squash
Ingredients
- 2 medium summer squash, sliced into 1/4 inch slices
- 1/2 tsp garlic powder
- salt and pepper to taste
- 1/2 cup parmesan cheese, shredded
Instructions
- Preheat the oven to 400˚F. Line a baking sheet with parchment paper.
- Place the squash in one layer on the prepared baking sheet. Sprinkle the garlic powder on top. Season with salt and pepper.
- Using a small spoon, spoon some parmesan on top of each squash.
- Place in the preheated oven for 20-25 minutes, or until parmesan in golden brown.

by having a squash allergy I am sadly missing out on great dishes such as this one. I will pass on this recipe, however I will send it to my mother who will LOVE it.
