Easy Banana Bread French Toast for One recipe. A great way to use up your leftover banana loaf, this makes a quick breakfast idea.
What is your go-to order for brunch?
Mine is either Eggs Benedict or French Toast. My reasoning is that I only order food that I don’t make at home.
But then that got me thinking… why don’t I make French Toast at home? I understand the Eggs Benedict because poaching an egg is a pain, but French Toast? It seems easy enough to make.
Then when I asked John if he wanted French Toast he said no. And I remembered why I didn’t make it.
Most recipes will make a large batch, but when it’s only me eating it I wanted to keep it small.
This is where this Banana Bread French Toast for One comes in!
What do you need to make this Banana Bread French Toast for One?
If you have leftover banana bread, you definitely don’t need much. All you need is:
- egg
- milk
- cinnamon
- sugar
- vanilla
- butter
- leftover banana bread
That’s it!
For this recipe, I used my Gluten Free Oatmeal Banana Bread, but you can use whatever banana bread you have on hand.

Banana Bread French Toast for One
Ingredients
- 1 large egg
- 1/2 cup milk of choice
- 1/2 tsp ground cinnamon
- 1 1/2 tsp granulated sugar
- 1/2 tsp vanilla extract
- 1 Tbsp salted butter
- 2 slices leftover banana bread
Instructions
- In a shallow bowl, mix together the egg, milk, cinnamon, sugar and vanilla.
- In a medium skillet, melt the butter over medium heat.
- Meanwhile, dip the banana bread into the egg mixture.
- Place dipped banana bread onto the hot pan and fry the slices until golden brown. Flip and cook the other side.
- Serve immediately with powdered sugar and syrup.
Notes
- There will be some egg mixture left over. You can probably use the egg mixture for 4 pieces of banana bread.
- Use gluten free banana bread to make these gluten free.
