t has been around 1.5 weeks since our second son was born, and we are so in love. Time has been going by so slow but so fast, I never know what day of the week it is anymore.
But while we bask in the cuteness of our newborn baby, we have been neglecting all of the overripe bananas in our fruit bowl. Time to make the best banana muffins ever.
They are almost like banana bread muffins. It’s more like a single serving banana cake than a muffin. If you have a lot of bananas that need using, this is the best banana muffin recipe. It is toddler approved, so you know that they are good.
Banana Muffins Ingredients
You just need a couple of pantry essentials to make these homemade banana muffins. All you need is:
- all purpose flour
- baking powder
- baking soda
- mashed bananas
- white sugar
- egg
- salted butter

- muffin pan
- muffin liners
- large bowl & medium bowl
- wire rack
Tips
Storage: Store the cooled muffins in an airtight container at room temperature on the kitchen counter for up to 4 days. The best way to ensure moist muffins while storing is to line the airtight container with paper towels and place the muffins in a single layer. This will prevent dry muffins. You can also store them in the fridge for up to 1.5 weeks.
Add some toppings to the tops of the muffins. For an extra crunch, add something extra to the top of each muffin. I personally love chopped pecans or cashews, but anything works!
Variations
Chocolate Chip Banana Bread Muffins. Make the full recipe according to the recipe card, but mix in 1 cup of chocolate chips to the dry ingredients.
Switch up the flour. Instead of regular flour, you can use whole wheat flour or whole wheat pastry flour. I wouldn’t suggest using some of the other flour alternatives, such as almond flour, as it may lead to dry muffins.

Banana Muffins
Ingredients
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 3 large ripe bananas, mashed
- 3/4 cup granulated sugar
- 1 large egg
- 1/3 cup salted butter, softened
Instructions
- Preheat the oven to 350℉. Line a muffin pan with paper liners and set aside.
- In a medium bowl, mix together the flour, baking powder and baking soda.
- In a separate bowl, cream together the bananas, sugar, egg and butter until smooth.
- Slowly mix the dry ingredients into the wet ingredients until just combined.
- Divide the batter evenly into the prepared muffin pan and bake in the preheated oven for 25 minutes, or until a toothpick inserted in the center of the muffin comes out clean.
