Easy Banana Shortbread Cookies recipe. This homemade dessert recipe is actually fairly healthy, they make a great snack!
So here’s the situation. I am one of those people who can only tolerate eating bananas if they are mostly green. Any riper than that and I can’t stomach it. I’m a little picky with them, so that is why I bake with bananas quite often.
But I have gotten smarter with buying bananas, so now I buy only two or three at a time. The problem with that though is that if they go ripe, I don’t have enough bananas to bake with.
Enter these shortbread cookies. Using only one ripe banana, there is no need to buy more bananas so that you can close them up in a bag until they ripen up. Perfect!

It's funny how people are so particular about the stage of ripeness the banana has to be when they eat it. Personally, I like mine nice and yellow. These cookies look delish!

Usually I'm better with bananas themselves, not in things – with the exception of banana bread!

YES! This recipe will save all of my ripe bananas. I almost always have ripe bananas, but not enough to make something out of it. 🙁 Now, I have this! Sounds yummy!

Bananas are so good in cookies, brownies, breads, etc – everything baked! In fact, that's the only way I actually consume them. 🙂 Right now I have 6 green bananas sitting on my counter – and I will be waiting for them to go ripe so that I could bake something!
