Happy Cinco de Mayo!
As a Canadian, I can’t say that I have ever celebrated Cinco de Mayo. But now that I am in the US, I love a good excuse to eat tortillas and tacos. And these Bean and Cheese Quesadillas are the first things I am going to be making.
Did you know that Tortilla Pans were a thing? I didn’t, until I got this FORCE BLUE Blue Carbon Steel Crepe and Tortilla Pan from De Buyer. These Bean and Cheese Quesadillas are made on that pan, and let me tell you. It made such a difference, and cooked the quesadillas so perfectly.
My sister saw the pan that I was using and immediately bought one herself because she fell in love with how well it cooked both tortillas and crepes. I promise you, once you try it you won’t want to cook quesadillas any other way.
What do you need to make these Bean and Cheese Quesadillas?
Not much at all! Perfect for a last minute lunch idea for Cinco de Mayo with these ingredients:
- black beans
- salsa
- mayonnaise
- cheese
- cumin
- chili powder
- flour tortillas

Bean and Cheese Quesadillas
Ingredients
- 1 (15 oz) can black beans, drained
- 1/4 cup medium salsa
- 2 Tbsp mayonnaise
- 1 cup cheddar cheese, grated
- 1 tsp ground cumin
- 1 tsp chili powder
- 12 flour tortillas
Instructions
- Mash the black beans in a medium bowl. Add in the salsa, mayonnaise, cheese, cumin and chili powder. Mix until fully combined.
- Lightly spray a tortilla pan with oil and heat on medium heat. Spread around 1/4 cup of the black bean mixture on one tortilla, then sandwich another one on top. Heat on the pan, flipping after 1-2 minutes. Repeat with the remaining tortillas
