Easy Biscoff Rice Krispie Ice Cream recipe. Almost like a cookie butter flavoured rice Krispie treat in a frozen dessert form.
We are 7 days into our camping road trip, and we have done so many things already!
We went to Iowa, Nebraska, Wyoming, Colorado and now we are in Utah. I have been posting all about our road trip on my Instagram stories, so be sure to follow along with our wild (and breathtaking) adventures there!
But right now, we are in Utah in the middle of an extreme heat warning, and all I can think of is making this Biscoff Rice Krispie Ice Cream.
Okay, so I was kind of cheating with this recipe. This Biscoff Rice Krispie Ice Cream recipe is almost identical to my Biscoff Ice Cream recipe, but I added rice krispies.
Different recipe? Not really. But a fun new way to use up your rice krispies? Absolutely.
And the combo is so good that I will classify it as a new recipe because I think Biscoff and rice krispies should be the new peanut butter and chocolate. Who’s with me?
I do have a tip for you when you are making this ice cream. If you wanted the rice krispies to be actually crispy when you eat the ice cream, I would suggest you have it as soon as the ice cream maker is done churning. So without freezing it. The consistency will be more like a soft serve ice cream (which I LOVE) and you get some crispy bits on the inside.
However, if you want the rice krispies to be more of a softer consistency, like in your cereal, then freezing it is the way to go.
Personally, I like it both ways. Try them both out! See which one you prefer!
Also, if you don’t have Biscoff don’t sweat it! I know when I lived in Canada it was next to impossible to find the spread anywhere in stores. You can just swap it out for your favourite cookie butter spread! Use what you have on hand or available! It is good any way you churn it.

Biscoff Rice Krispie Ice Cream
Ingredients
- 1 cup biscoff spread
- 1/2 cup granulated sugar
- 2 Tbsp pure vanilla extract
- 2 cups whipping cream
- 1 cup milk
- 1 3/4 cup rice krispies
Instructions
- In the bowl of a stand mixer, mix together the biscoff spread and sugar until fully combined.
- Turn the mixer to low and mix in the vanilla, whipping cream and milk until fully combined.
- Pour the mixture into your ice cream maker and process according to manufacturer's instructions. When 5 minutes are remaining, pour in the rice krispies until fully incorporated.
- When the ice cream is done, pour into an airtight container and freeze until ready to serve.
