Easy Blueberry Applesauce Loaf recipe. Super simple breakfast or nut free snack idea, and made with cinnamon and dried blueberries.
Back from Hawaii, and back to reality next week. Other teachers out there, how long does it take YOU to get back in the swing of things? I feel like my brain is mush, and the school year hasn’t even started yet!
Even though I miss Hawaii and being on vacation, I am kinda glad to be back in my own kitchen. Since John is staying in Vancouver this year, I am not sure how I will be able to eat all of my baking by myself, but I will find a way.
Maybe using my students as taste testers? I guess this means I need to stop baking with peanut butter 😢
Let’s start by testing out this Blueberry Applesauce Loaf on them.
For some reason, I have been refusing to go to the supermarket this past week to buy food for myself. This is the first time I have lived alone in my LIFE, so buying food for only me is very new to me. I am almost reluctant to do it, seeing as how I have so many random foods in my house.
These past few days, I have been living off of tuna, pasta, crackers and cheese. It doesn’t even bother me, I am more than happy to eat the same thing day in and day out. This is probably a good idea, since I am most likely going to be moving next year anyways.
Going through my pantry, looking for things to eat, I saw a pack of dried blueberries. You remember when I got a bunch of dried blueberries from Wild Coast Fruit Co and made my Dried Blueberry Coconut Oil Blondies. Well I wanted to make another recipe using the dried blueberries. Because it would be a crime against… SOMETHING dramatic if I didn’t share them with you in the form of a recipe.
Since me and John made a pact to eat healthy this year while we are doing long distance, I made this Blueberry Applesauce Loaf healthy by using applesauce to sweeten the cake, as well as adding in my favourite dried blueberries!
Maybe next time I will make a whole wheat version of this loaf, but I have actually run out of whole wheat flour! So this is my dilemma. Do I go out to buy more whole wheat flour, or should I use up my all-purpose first?
Any way you make this Blueberry Applesauce Loaf, using whole wheat flour or not, you will be SO grateful for it on weekdays where you need a quick grab and go breakfast. Which is me basically every weekday morning. I pre-cut this bread and put it on my counter, literally right next to the front door.
I think I am going to make a couple of loaves in preparation for the first day of school next week. Some of these and maybe a Lemon Blueberry Bread as well. This is making me feel more prepared to go back to school already!

Blueberry Applesauce Bread
Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup oil
- 2 large eggs
- 1 cup applesauce (I used raspberry)
- 3/4 cup dried blueberries
Instructions
- Preheat the oven to 350°F. Lightly spray a loaf pan with cooking spray. Set aside.
- In a medium bowl, mix together the flour, sugar, baking soda, cinnamon, baking powder and salt.
- In a separate bowl, mix together the oil, eggs and applesauce.
- Mix the wet ingredients into the dry ingredients until fully combined. Fold in the blueberries.
- Pour the batter into the prepared pan and bake for 55-65 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan for 10 minutes, then remove to cool completely on wire racks.

YUM! I don’t think I have tried blueberry applesauce loaf. Looks interesting and I cannot wait to try it. I love it when I come up with unexpected ingredients in the pantry. Makes cooking so much easier.

I haven’t tried freeze dried blueberries in my baking, but love putting them on my cereal. A slice of this warmed up with a pat of butter sounds like heaven right now
