For all of you who want to have a bowl of oatmeal in the morning but don’t like the oatmeal taste or texture, I have a recipe for you!
This Blueberry Muffin Blended Baked Oats is a great way to enjoy your morning oatmeal with a cake-like texture. It uses healthy ingredients, but honestly has the best taste. This tasty breakfast is basically like eating cake for breakfast, it is so good!
I made blended baked oats for the first time a couple of years ago, and I just can’t stop making it. Trust me, this will become your new favorite breakfast.
Blueberry Muffin Blended Baked Oats Ingredients
This healthy blended baked oats is made with under 10 simple ingredients. All you need is:
- rolled oats
- baking powder
- chia seeds
- ground cinnamon
- very ripe banana
- oat milk
- fresh blueberries
- sparkling sugar
Equipment
- small high-speed blender
- oven-safe ramekin
Tips
What type of oats to use? I always use old-fashioned oats because that is always what I have on hand, but because in this recipe you blend oats, you can use whatever oats you have on hand. Steel-cut oats, quick oats or even instant oats work well.
Don’t have a high-powered blender? A food processor works just as well. Alternatively, you can replace the oats with oat flour so you don’t need to blend it.
Variations
Add in some extra protein. A scoop of protein powder goes a long way in this recipe. This way, you can get in a little bit of protein into your breakfast on busy weekday mornings.
Switch out the blueberries. This blueberry muffin baked oatmeal is such a good base recipe, you can replace the blueberries with whatever you like! I personally like chocolate chips or raspberries, but you can use whatever you have on hand!

Blueberry Muffin Blended Baked Oats
Ingredients
- 1/2 cup rolled oats
- 1 tsp baking powder
- 2 tsp chia seeds
- 1/4 tsp ground cinnamon
- 1/2 medium banana
- 1/2 cup oat milk
- 1/4 cup fresh blueberries
- 2 tsp sparkling sugar
Instructions
- Preheat the oven to 400°F.
- In a small blender, add the oats, baking powder, chia seeds, cinnamon, banana and milk. Pulse until smooth.
- Mix in half of the blueberries into the batter. Pour the batter into a ramekin. Top with the remaining blueberries. Sprinkle with the sparkling sugar.
- Bake in the preheated oven for 20 minutes.
Notes
- Best served when warm out of the oven.
- Switch up the blueberries with whatever fruit you have on hand.
