Easy Brownie Mix Buckeye Cookies recipe. Made with peanut butter and cream cheese, this simple dessert makes a great sweet treat.
The weather in Chicago is a rollercoaster ride that I wasn’t at all ready for.
One day it is scorching hot and we need all our fans and air conditioners blasting all day long. The next day? I am huddled under the covers in 2 sweaters trying to keep warm.
Today is one of those sweaters days. So I am taking full advantage of it and baking cookies.
What you need to make Brownie Mix Buckeye Cookies
All you need is:
- brownie mix
- butter
- cream cheese
- eggs
- powdered sugar
- peanut butter
- chocolate chips
That’s it!
So I basically listed my pantry essentials list. Minus the brownie mix sometimes.
But if you have a spare brownie mix in your cupboard, this is the recipe for you!!
These cookies kind of remind me of my Chocolate Peanut Butter Filled Cookies, but these ones are a lot more decadent.
Some may say they are too rich, but really. Is that even a thing?

Brownie Mix Buckeye Cookies
Ingredients
- 1 box family size brownie mix (18.4 oz)
- 1/4 cup salted butter, melted
- 4 oz cream cheese, softened
- 1 large egg
- 1 cup powdered sugar
- 1 cup creamy peanut butter
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set aside.
- In a medium bowl, cream together the brownie mix, butter, cream cheese and egg until fully combined.
- Scoop the mixture into the prepared cookie sheet and bake in the preheated oven for 12-15 minutes, or until the edges of the cookie are slightly hardened.
- Meanwhile, in a medium bowl, cream together the powdered sugar and peanut butter until fully combined. Form the mixture into 1 inch balls, making sure you have 1 for every cookie.
- Once the cookies are cooked, immediately place 1 peanut butter balls on top and press down slightly.
- Allow to cookies to cool completely.
- Once the cookies are cooled, melt the chocolate in a microwave safe bowl in the microwave in 30 second intervals, mixing until smooth and melted.
- Spoon some melted chocolate on top of each cookie, making sure it covers the peanut butter ball. Allow the chocolate to set before storing in an airtight container.

Chocolate and peanut butter is one of my favorite combinations, and these look so good! I love that the recipe starts with a brownie mix, which makes it easier for me to feel like I can fit baking into my busy life.

What’s not to love here? Chocolate and peanutbutter is my weakness – last night I ate half a bag of Aldi peanut butter cups while watching netflix, lol! I love that you used brownie mix for this, I always have some of that around.

I don’t have a cookie scooper but will ice cream scooper do? Recipe calls forminimuffinpan , says one tsp. Oh never mind I’m outta my league with all you bakers . Sorry

An ice cream scooper would do, but those are typically larger than a cookie scooper.
