Easy Buffalo Chicken Quesadillas recipe. This simple lunch idea is perfect to make as meal prep on weekends or as a snack on weekdays.

I feel like this last week of school is going to be the hardest for me. Not just because it is exam week. For me it’s going to be managing my time, and not getting bogged down by the news. Today, I am going to take a break from the news and educate myself on issues that are relevant right now.
Since I am having less and less energy these days for making food, these Buffalo Chicken Quesadillas are really a life saver.
Made with under 10 ingredients, and I am sure you have most of them at home too.
All you need is:
- oil
- chicken
- salt and pepper
- hot sauce
- ranch dressing
- bell pepper
- cheese
- tortillas
That is it!
My husband is usually not a fan of quesadillas, but he complimented these so much, and told me to keep them on a regular rotation. And I’m going to have to agree. I am so addicted!
I used to be all about my Nacho Quesadilla and my Pizza Quesadilla, but I think I have a new favourite!
They are also so easy to make, I really don’t have any excuse NOT to make them as often as I can. Hello new favourite weeknight meal!

Buffalo Chicken Quesadillas
Ingredients
- 1 Tbsp olive oil
- 1 medium chicken thigh, cubed
- salt and pepper
- 2 Tbsp hot sauce
- 1 Tbsp ranch dressing
- 1/2 medium green bell pepper, diced
- 1 cup shredded cheese, divided
- 4 flour tortillas
Instructions
- In a small skillet, heat the oil over medium heat. When the oil is hot, add in the chicken and season with salt and pepper. Cook until the chicken is no longer pink, around 5 minutes. Remove from heat.
- In a small bowl, mix together the chicken, hot sauce and ranch.
- Lightly spray a medium skillet with cooking spray. Place a flour tortilla on the skillet and heat over medium heat. Layer with 1/4 cup cheese, half of the chicken mixture, half of the diced green bell pepper, then another 1/4 cup of cheese. Place another flour tortilla on top and cook for around 3 minutes. Flip and cook for another 3 minutes or until lightly brown.
- Repeat for the other quesadilla. Cut into 4 and enjoy!
Notes
- These are great for a packed lunch the next day!
