Easy Butter Pecan Cookies recipe. This simple dessert idea makes a great grab and go snack, or tea time treat.
Does this recipe feel like fall? Because it feels like fall to me. The best way to feel the warm and fuzzy feelings of fall is to bake some warm cookies for a delicious treat.
So we made it to Vancouver. On our road trip with a 1 year old across the country, plus into another country. And the weather here is NICE.
The best part about Vancouver is the weather. While it was unpleasant in Madison walking into a room with no air conditioning, here in Vancouver it is cool even outside. I don’t need copious amounts of ice cream to keep me cool. Time to take advantage of that fact and make some chewy cookies. And since it feels like fall, let’s make these Butter Pecan Cookies that taste like fall. These chewy butter pecan cookies are probably some of my favorite cookies right now.
Butter Pecan Cookies Ingredients
You only need some pantry essentials, plus pecans to make the best cookies. All you need is to make this butter pecan cookie recipe is:
- unsalted butter
- dark brown sugar
- white sugar
- eggs
- vanilla extract
- all-purpose flour
- cornstarch
- baking soda
- sea salt
- chopped pecans (butter pecans or toasted pecans for more toasty flavor)

Tips & Variations
- Make brown butter pecan cookies for a more nutty flavor! Nutty browned butter had such a moment around 10 years ago, but I really think that we should bring it back. It gives it such a great buttery flavor, and creates a perfect chewy texture. All you need to do is melt the butter in a small saucepan until it is brown and has a nutty aroma. Do NOT overcook this, because it will burn shortly after it becomes the nice, golden brown caramel color. Then mix it into the sugar, and continue the following steps as written in the recipe card.
- Don’t have pecans? Or don’t like the pecan flavor? No problem! Any nut will do. As a personal preference, I really enjoy pecans more in baking. But feel free to use walnuts, pistachios, or whatever you have on hand.
- Add in some chocolate. Everything is better with chocolate! I like drizzling some melted semi sweet chocolate or white chocolate chips on top.
- Make cookies ahead of time: If you want to make these cookies ahead of time, simply make the dough as usual. Then store it in your fridge for up to 3 days. You can also roll the dough into cookie dough balls, and place in a large freezer bag. The frozen balls of dough will be good for up to 3 months.
- Storing these cookies: Store these cookies at room temperature in an airtight container for up to 7 days.
- Freezing these cookies: These Butter Pecan Cookies actually freeze beautifully. Just place the baked cookies in a freezer bag, and freeze for up to 3 months.

Butter Pecan Cookies
Ingredients
- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups pecans, chopped
- 40 whole pecans for topping
Instructions
- In a large bowl, mix together the butter and sugar until fully combined. Mix in the eggs and vanilla.
- In a separate bowl, mix together the flour, cornstarch, baking soda and salt.
- Slowly mix the dry ingredients into the wet ingredients until fully combined.
- Cover and refrigerate the dough for at least 2 hours.
- Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
- Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheet. Press a pecan on top.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly brown. Allow to cool completely on the baking sheet.
