Chewy Butterscotch and Chocolate Chip Cookies recipe that is quick and easy to make. This is a great nut free snack to take to work or school.
I hope you know that the only way that we can still be friends is if you also agree that there is no such thing as too many cookie recipes. It doesn’t matter what season: spring, summer, fall.. there will always be a batch of homemade cookies in the house. I do not believe in only making cookies for Christmas. They are a weekly treat in my house.
Just don’t tell John. We promised to eat healthy in this newlywed long distance relationship that we have going on now. It’s lucky that he doesn’t read my blog, right?
If we are being completely honest with each other now, I actually made these Butterscotch and Chocolate Chip Cookies a couple of months ago when me and John were still living together. I recipe tested this recipe so many times that I had cookies for the staff and students at my school almost on a regular basis.
Of course, I kept a couple of the batches for myself too. Recipe testing is hard business 😉
But looking at these photos again, I really want to make them again! The way I made these Butterscotch and Chocolate Chip Cookies is chewy on the inside, hard shell on the outside, and sweet enough so that they are the perfect treat to go with a cup of strong coffee.
If you wanted a less sweet cookie, I would add less chocolate chips or reduce the sugar. There is a whopping 2 cups of sugar in these bad boys, but I wouldn’t have it any other way.
Even if you are a butterscotch hater, give it a try. John claims he HATES butterscotch and still ate almost a full batch in one day. The butterscotch chips blend in perfectly with the chocolate chips and the chewy cookie, you will change your opinion about butterscotch. I promise.
Save it for Christmas, or make it right now. Cookies all year round in this house! How about yours?

Butterscotch and Chocolate Chip Cookies
Ingredients
- 1 cup salted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp hot water
- 3 cups all-purpose flour
- 1/2 tsp salt
- 1 1/4 cup chocolate chips
- 1 1/4 cup butterscotch chips
Instructions
- Preheat the oven to 350˚F.
- Cream together the butter and the sugars until light and fluffy. Beat in the eggs one at a time until fully combined. Mix in the vanilla.
- In a small bowl, dissolve the baking soda in the hot water. Mix into the sugar mixture. Stir in the flour and the salt. Fold in the chocolate chips and butterscotch chips.
- Scoop the batter onto an ungreased baking sheet and bake in the preheated oven for 10 minutes, or until the edges are lightly browned.

Part of what I love about these cookies is that they’re so blonde (not caramelized). I haven’t had a chocolate chip cookie like that in a long time, and I miss it!
