Easy Butterscotch Peanut Butter and Chocolate Rice Krispie Squares recipe makes for a quick and easy treat. Made without marshmallows.
Is anyone else drenched in sweat this summer every time they step outside?? I have been staying at home when I can, venturing out only at night or when I REALLY want a cold drink from Starbucks. Then I put on a hat and cover myself in sunscreen to make the 15 minute walk for a cold drink. Worth it in this heat. As an added bonus, I am escaping the heat of my kitchen. That is, the heat from all of the cakes that I have been testing out for my wedding. I need got to stop this madness.
So taking a break from baking cakes today to bring you these Butterscotch, Peanut Butter and Chocolate Rice Krispie Squares: a no bake dessert idea. Because THIS is what I should be making all summer long. Not making and eating wedding cakes a month before the wedding. Not good in this heat, or for my waistline.
I wonder if I will fit into my wedding dress when I get home?
And here I am making another dessert. Another dessert that John won’t eat. Why is it that he won’t eat cake OR butterscotch? What am I doing to myself??
But it is totally worth it. I don’t even think I really want to share these Butterscotch, Peanut Butter and Chocolate Rice Krispie Squares anyways. They have my favourite sweet and salty combo going on with the butterscotch and chocolate chips mixed in with the peanut butter. Plus, they do NOT require that I turn on the oven.
In this heat, that is definitely a necessity.
I need to admit that I actually DID share these Butterscotch, Peanut Butter and Chocolate Rice Krispie Squares. I brought them to two separate picnics, because this recipe makes a LOT of squares. The only downside of bringing these to picnics is that they melt really quickly in this heat. So make sure everyone knows how good these are so that they are the first things to go.
One tip that I noticed helped is to put them in the freezer overnight and take them out right before you are heading out of the door.
Any way you eat them: straight from the freezer or melted, they really are super delicious. After the first picnic, where not all of them were eaten, I ate a couple of them melted to the bottom of the container like soup. No shame.
Yup. Bikini and wedding season. I am ready for you.

Butterscotch, Peanut Butter and Chocolate Rice Krispie Squares
Ingredients
- 1 3/4 cup butterscotch chips
- 1 cup creamy peanut butter
- 6 cups rice krispies
- 1 3/4 cup chocolate chips
- 1 Tbsp salted butter
Instructions
- Line a 9x13 inch baking dish with parchment paper. Set aside.
- In a large microwave safe bowl, melt the butterscotch chips and peanut butter in 30 second intervals, mixing until smooth. Mix in the rice krispies.
- Press the mixture into the prepared baking dish. Cover and refrigerate until hardened.
- In a microwave safe bowl, melt the chocolate chips and butter in 30 second intervals, mixing until smooth. Spread evenly over the bars.
- Refrigerate until the chocolate is firm, then cut into squares.

That these treats don’t use marshmallow makes them especially interesting. But did I get the idea that you’re planning to bake your own wedding cake? I considered doing that for my wedding, but then decided that I didn’t need the added stress. Although, to tell you the truth, I think it would’ve been do-able. We decided in the end to go with a tower of cheese wheels, and I’m telling you, that was fun.

This summer has been so hot! Even here in the UK, it has been crazy, but I am not complaining I love the sun. And I am loving these squares because you don’t use marshmallows. Vegetarian marshmallows are so expensive!
