Aah.. Don’t you just love the first day of school. Anxiety is in the air… I can smell it.
Or maybe that’s just me that I’m smelling. I even woke up at 4am because I was so nervous. I even went out and exercised just to shake off the nerves.
Well this is it. My final year. Then I will be qualified to go out in the world and teach math. I can never escape the classroom.
It’s almost as if I want to return to school every year. It’s safe. I know what I’m doing. And I love to learn. People have been telling me for ages that you learn the most from your students, so I think that chose my career choice wisely.
And with the arrival of school comes the inevitable packed lunch. Every day, no fail, it seems like my lunch is the same: an apple, a granola bar, and a cheese sandwich that I sometimes spice up with some cucumbers if I’m feeling crazy. I know, right? It’s more boring than that 8 o’clock class that you have with that teacher whose voice sounds like a lawn mower, but a little more monotonous if that’s even possible.
So what am I going to do about it? Simple! Buy one of those barbecue chickens for dinner (SO quick and easy, and WAY cheaper than cooking a chicken by yourself) then make some Caesar chicken salad with the remainder of the chicken. That way, you just made yourself an easy dinner AND an easy lunch.
Super win-win.
This is like my chicken salad sandwich, but mega revamped. Now I’m excited to eat my sandwich at lunch, knowing that I’m going to be eating more than just plain old cheese.
Not that I’m trying to put down cheese or anything, I love cheese dearly. But now, whenever I want to mix things up, I won’t just reach for my cucumbers. I’ll make this instead.
Caesar Chicken Salad
Ingredients
- 2 1/2 cups cooked chicken, cubed
- 1/2 cup Caesar salad dressing
- 1/4 cup Parmesan cheese, grated
- 1 tsp dried oregano
- 2 tsp freshly squeezed lime juice
- pepper to taste
Instructions
- In a medium bowl, mix together all the ingredients.

Great idea to make it for a sandwich. I'm typically not a fan of cesar salad but I wouldn't be opposed to having it on a sandwich 🙂

Chicken salad was my favorite for a long period of time. I don't have a conventional lunch period now, but I loved it–especially spicy chicken salad with pecans and celery for crunch. I love your Caesar idea!
