Easy Caramel Protein Coffee Cake Loaf recipe. This healthy breakfast idea tastes decadent enough to have for dessert.
Probably my favourite thing to make are cake loafs.
Since they are in a loaf pan, you can technically call it a bread. And breads are breakfast foods. So cake for breakfast? I’m down.
This Caramel Protein Coffee Cake Loaf is actually pretty healthy for a cake, so there is zero guilt in having this for breakfast.
What do you need to make this Caramel Protein Coffee Cake Loaf?
Apart from the Premier Protein Shake, it is mainly pantry essentials. But this is your sign to make the Premier Protein drinks part of your pantry essentials 😉.
All you need is:
- flour
- baking powder
- cinnamon
- baking stevia
- brown sugar
- eggs
- premier protein caramel shake
- oil
- coconut flour
- coconut oil
- sugar
Substitutions and Variations
I had some Premier Protein Caramel Shakes and some Vanilla Shakes. Personally, I love the Caramel Shakes, but I wanted to test out the recipe on both of them. Before I had time to do that, my husband drank all of the Vanilla Shakes. Those are his personal favourite, so I can never keep them in the house long enough to bake anything with it.
But, since I have made a very similar recipe to this with Pumpkin Spice Protein Shake, namely my Pumpkin Spice Protein Bread, I am sure that this will taste good with any protein shake mixed in.
You can also use regular flour and butter in place of the coconut flour and the coconut oil. I just had a lot of those ingredients in my cupboards that needed using up. Use what you have on hand!

Caramel Protein Coffee Cake Loaf
Ingredients
Loaf
- 1 2/3 cup all-purpose flour
- 3/4 tsp baking powder
- 3 tsp ground cinnamon
- 3/4 cup baking stevia
- 1/4 cup brown sugar
- 2 large eggs
- 1 cup Premier Protein Caramel Shake
- 1/2 cup avocado oil
Crumb Topping
- 2 1/2 Tbsp coconut flour
- 3 Tbsp coconut oil
- 2 tsp ground cinnamon
- 2 Tbsp granulated sugar
Instructions
- Preheat the oven to 350°F. Line a loaf pan with parchment paper and set aside.
- In a large bowl, mix together the flour, baking powder, baking soda, cinnamon, stevia and brown sugar until combined.
- In a medium bowl, beat the eggs. Mix in the protein shake and oil until smooth.
- Slowly mix in wet ingredients into the dry ingredients until just combined. Do not overmix.
- In a small bowl, mix together the crumb topping ingredients. Set aside for now.
- Pour the batter into the prepared loaf pan and bake in the preheated oven for 20 minutes. Top with the crumb topping. Return to the oven for an additional 25-35 minutes, or until a toothpick inserted near the centre comes out clean.
- Allow to cool in the pan for around 15 minutes before transferring to a wire rack to cool completely.
