My husband requests carrot cake all the time. Almost every week. And carrot cake is a process to make.
Do you think these Carrot Oatmeal Cookies are a good substitute for regular carrot cake? I think so, especially since I can make them a lot faster than it takes me to make regular carrot cake.
What you need to make Carrot Oatmeal Cookies
I’m sure you have most, if not all, of the ingredients at home. All you need is:
- butter
- brown sugar
- egg
- vanilla
- flour
- cinnamon
- baking powder
- baking soda
- carrots
- oats
That’s it!
Tips to make these cookies
My number one tip to make these cookies are: use fresh grated carrots!! I have tested these cookies using pre-grated carrots, and while it was a lot easier to make, it made the cookies a whole lot more dry.
If you wanted to jazz these cookies up a little bit more, try adding in some finely chopped nuts. Chopped walnuts work best in these cookies, but pecans and almonds work great too.
An important note about softening your butter: do not try softening your butter in the microwave!! The microwave will heat the butter unevenly, leading to half melted and half hard butter. The problem with adding melted butter into these cookies is that they will spread a LOT. To prevent this, just place your butter on your counter a couple of hours before you want to make these cookies.

Carrot Oatmeal Cookies
Ingredients
- 1/2 cup salted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup grated carrots
- 1 cup rolled oats
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the egg and vanilla until combined.
- In a separate bowl, mix together the flour, cinnamon, baking powder and baking soda.
- Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the carrots and oats.
- Using a medium cookie scoop, scoop the dough onto the prepared baking sheet and bake in the preheated oven for 15 minutes. Allow to cool completely on the baking sheet.
