Easy Cashew Vanilla Granola recipe. Made with oats, cashews, raisins, coconut oil and other pantry staples, this makes a great breakfast or snack idea.
I am always fully stocked with oats.
Back in November, I bought a 10 lb container of Old Fashioned Oats, and since the pandemic hit, I bought another 10 lb container. (If you also want a 10 lb container, it is in stock on Amazon!!)
So I am basically living off of oatmeal and granola these days. And I’m not mad about it.
I just got some cashews from my latest Imperfect Foods box, and I knew I wanted to put it in granola. This Cashew Vanilla Granola was thought up long before I got my cashews delivered. It needed to happen around here.
And with ingredients this simple, I think that it also needs to happen in your house too!
What do you need to make this Cashew Vanilla Granola?
This granola uses under 10 ingredients, and is so quick and easy to make.
All you need is:
- oats
- brown sugar
- cashews
- raisins
- cinnamon
- salt
- honey
- coconut oil
- vanilla extract
That’s it!!
I have been making my peanut butter granola a lot lately, but my husband is getting really sick of peanut butter. What can I say? I love peanut butter. But to make him happy, I switched it up with this granola.
And I am glad I did. This granola is going to be on my regular rotation, you can be sure of that!

Cashew Vanilla Granola
Ingredients
- 2 cups old fashioned oats
- 1/4 cup brown sugar
- 1/3 cup cashews
- 1/4 cup raisins
- 1/4 tsp ground cinnamon
- pinch of salt
- 2 Tbsp honey
- 2 1/2 tsp coconut oil
- 1/2 Tbsp vanilla extract
Instructions
- Preheat the oven to 300°F. Line a baking sheet with parchment paper. Set aside.
- In a large bowl, mix together the oats, sugar, cashews, raisins, cinnamon and salt.
- In a small microwave safe bowl, heat the honey until melted, around 20 seconds. Mix in the coconut oil until it is melted. Mix in the vanilla until fully combined.
- Pour the wet ingredients in with the oat mixture until the mixture is evenly coated.
- Spread evenly on the prepared baking sheet and bake in the preheated oven for 20 minutes, or until slightly brown.
- Allow to cool completely, then break into pieces. Store in an airtight container.
