Does anyone really like cauliflower on its own?
Whenever there is a fruit and vegetable platter out, it seems like the cauliflower is always the one to be left last on the tray. I LOVE plain cauliflower, but it is hard to find someone who shares my love for this vegetable.
But how about if it is covered in cheese? I’m sure this Cauliflower Mac and Cheese would be the first to go if this were on a vegetable platter.
What you need to make Cauliflower Mac and Cheese
You don’t need much at all to recreate this recipe! All you need is:
- cauliflower
- heavy cream
- cream cheese
- dijon mustard
- cheddar cheese
- garlic powder
- salt and pepper
That’s it!
Tips and Storage
One of my biggest tips when making this mac and cheese, or any mac and cheese really, is to use hand shredded cheese. If you use the pre-shredded stuff, it won’t melt as nicely and become gritty.
This keto mac and cheese is best stored in the fridge in an airtight container for up to 3 days. I actually think that the leftovers are the best part about making this recipe. Although this never really lasts for the full 3 days, it is nice to have the next day at work for lunch, or for dinner.

Cauliflower Mac and Cheese
Ingredients
- 1 head cauliflower, chopped
- 1 cup heavy cream
- 2 oz cream cheese
- 2 tsp Dijon mustard
- 1 1/2 cup sharp cheddar cheese, divided
- 1/8 tsp garlic powder
- salt and pepper to taste
Instructions
- Preheat the oven to 375˚F. Lightly spray a 9 inch square baking dish and set aside.
- Steam the cauliflower until crisp-tender. Remove from heat and set aside.
- Meanwhile, in a medium saucepan bring the cream to a simmer. Whisk in the cream cheese and dijon mustard until smooth. Mix in 1 cup of the cheddar cheese until melted and smooth. Mix in the cauliflower and pour the mixture into the prepared baking dish.
- Sprinkle the remaining 1/2 cup of cheese over the cauliflower mixture and bake in the preheated oven for around 15 minutes. Serve immediately.
