It’s Christmas freaking Eve people! Are you as ready as I am?
By ready, I really mean I have done the shopping (for the most part) but I have not yet wrapped anything. I’m talking not a single thing I bought is wrapped. That’s what I get for spending all the time I have at home baking cookies.
So I’m taking a break from the cookies, and am making something that I think every Christmas dinner should have: cheese biscuits. These babies are hard pressed to make it through one day. Trust me, I have first-hand experience.
I have literally made these 3 times this week, and I still can’t get enough of them. I think I’ll need to triple the recipe when I make them on the big day. But even if there isn’t enough, these biscuits are done from start to finish in around 20 minutes, so I could be constantly making more without anyone noticing.
Cheese Biscuits
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 2 tsp granulated sugar
- 4 tsp baking powder
- 1/2 tsp cream of tartar
- 1/2 cup shortening
- 2/3 cup cheddar cheese, shredded
- 2/3 cup milk
Instructions
- Preheat the oven to 425˚F.
- In a medium bowl, combine the flour, salt sugar baking powder and cream of tartar. Pour into a food processor, and add the shortening. Pulse to mix until the mixture resembles coarse meal.
- Stir in the cheese with a fork. Mix in the milk until fully combined.
- Turn the dough onto a floured surface, and flatten into a rectangular shape. Cut the dough into squares.
- Place the dough onto a ungreased baking sheet, and bake for around 15 minutes, or until golden brown.
