Fall dinners are all about the comfort foods. Don’t give me any of your fancy salads. I want all the cheese and the carbs. I want something that will stick to my bones.
It sounds like I want this Cheeseburger Macaroni and Cheese Casserole. Think my Cheeseburger Soup, but in casserole form.
One of my favorite things about this recipe is that I almost always have all of the ingredients in my house already. This is definitely a COVID meal. You know, one that uses all of your pantry essentials so there is no need to go to the grocery store.
Don’t have macaroni? Don’t worry! I usually mix and match the pasta in this casserole. Anything works!

Cheeseburger Macaroni and Cheese Casserole Ingredient List
You just need a couple of simple ingredients to make this cheeseburger casserole recipe. All you need is:
- elbow macaroni noodles (or any type of pasta you have)
- olive oil
- fresh onion
- garlic
- lean ground beef
- salt & black pepper
- tomato paste
- diced tomatoes
- mustard powder
- cheddar cheese
- pickles
That’s it!
Tips
Make sure to drain any excess grease if you aren’t using lean ground beef. Otherwise, if you cook ground beef and mix it into the rest of the ingredients, your meat mixture will get oily and watery.
Storage: Store this Cheeseburger Macaroni and Cheese Casserole in a covered casserole dish or an airtight container in the fridge for up to 3 days.
Variations
Jazz it up with some extra seasonings. I particularly like adding in some Italian seasoning
Add some hot sauce to the mixture! To you like it spicy? Top it with some hot sauce or some red pepper flakes.
Switch up the ground beef. Try using ground turkey or ground chicken instead!

Cheeseburger Macaroni and Cheese Casserole
Ingredients
- 2 cups dry elbow pasta
- 2 tsp olive oil
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 lb ground beef
- 3/4 tsp salt
- 1/2 tsp ground black pepper
- 2 Tbsp tomato paste
- 2 (14.5 oz) cans diced tomatoes
- 2 tsp mustard powder
- 2 cups shredded cheddar cheese, divided
- 1 medium dill pickle, diced
Instructions
- Preheat the oven to 350˚F. Lightly spray a 9x13 inch baking dish with cooking spray and set aside.
- In a large saucepan, bring salted water to a boil. Cook the elbow pasta according to package instructions. Drain and set aside.
- Meanwhile, heat the oil in a medium skillet over medium heat. Add in the onion and cook until fragrant. Stir in the garlic and cook for an additional minute.
- Mix in the ground beef and cook until no longer pink. Season with salt and pepper.
- Mix in the tomato paste, diced tomatoes and mustard powder. Cook until the mixture thickens a little more, around 2 minutes.
- Add in the pasta and mix until fully incorporated. Mix in 1 cup of cheese.
- Pour the mixture into the prepared baking dish. Top with the remaining cheese and bake in the preheated oven for 15 minutes, or until the cheese is melted.
- Top with the pickles and enjoy!
