What do you make when you have minimal ingredients in your kitchen?
No seriously, I am asking for myself. Because when I don’t have many ingredients in the house, I always seem to resort in either having a frozen meal for dinner or just ordering delivery.
But today, I opted to try to use the minimal ingredients in the house to make the main course. 3 ingredients, plus salt and pepper. That’s all you need to make this Cheesy Salsa Chicken.
What you need to make Cheesy Salsa Chicken
So what are these 3 ingredients? All you need is:
- chicken breasts
- salsa
- cheese
- salt & pepper
I’m sure you could have figured that out from looking at the photos, but I thought I may as well spell it out for all of you.
How to serve Cheesy Salsa Chicken
This chicken goes great with a baked potato and salad. That is usually my go-to with this chicken. If you wanted to be extra fancy, making some cheesy funeral potatoes would also go very well with this chicken.
The leftovers are also great in wraps and cut up to be put in omelettes. It makes great burrito bowls, or you can make a taco salad or quesadillas. Honestly, the sky is the limit. This chicken can be put in almost anything that you can think of.

Cheesy Salsa Chicken
Ingredients
- 1 lb chicken breasts
- salt and pepper to taste
- 1/2 cup salsa
- 1/2-3/4 cup cheddar cheese, shredded
Instructions
- Preheat the oven to 375°F. Line a baking sheet with foil and spray with cooking spray.
- Place the chicken on the baking sheet and season with salt and pepper
- Spread the salsa evenly over the chicken..
- Cook in the preheated oven for 25-35 minutes. Remove from the oven and sprinkle the chicken evenly with the cheese. Return the chicken to the oven and cook for an additional 5 minutes, or until the cheese is melted.
