Vanilla ice cream: yea or nay?
When given a choice of ice creams to buy, I will buy vanilla 90% of the time. Call me basic, but you really can’t go wrong. And if you get bored of vanilla ice cream? A great way to jazz it up is to top it with some fruit sauces! And this sweet Cherry Sauce is perfect ice cream topping, in case you were wondering.
This is such a simple recipe, you are going to want to take advantage of cherry season and make this recipe all of the time. It’s that time of year, so I have already bought 5 pounds of cherries. Expect to see many more cherry recipes around here.
Cherry Sauce Ingredients
You need 3 simple ingredients to make this fresh cherry sauce (plus water, but I don’t really count that as an ingredient). All you need is:
- pitted cherries
- white sugar
- cornstarch

- cherry pitter (optional, but very handy!)
- medium saucepan
- small bowl
Tips
Storage: store this cherry dessert sauce in an airtight container in the fridge for up to 3 days.
Type of cherries to use: It really depends on your personal preference. If you wanted a sauce for more sweet dishes, try using bing cherries. If you didn’t want this sauce overly sweet, try looking for some sour cherries or some tart cherries to use in this recipe.
What can you use this sauce for? This sauce is the perfect topping for your favorite desserts. I love putting it on top of chocolate cake or pound cake
Variations
Savory Cherry Sauce: only use a little sugar, then add a little balsamic vinegar to the cornstarch slurry. I like using this on top of savory dishes, like pork chops, roast chicken or pork tenderloin.
Switch up the fruit. To make different homemade sauces with different fruit, just make the full recipe as is but replace the cherries with the equivalent amount of another fruit. I love it with blackberries or strawberries, but any fruit would work!

Cherry Sauce
Ingredients
- 3/4 lb fresh cherries, sliced and pitted
- 1/3 cup granulated sugar
- 2 tsp cornstarch
- 4 Tbsp water, divided
Instructions
- Add the cherries, sugar and 2 Tbsp water in a medium saucepan. Cook over medium heat until the cherries are tender.
- Meanwhile, in a small bowl mix together the cornstarch and the remaining 2 Tbsp water until smooth.
- Slowly whisk in the cornstarch mixture into the cherry mixture and cook at a low hear until the sauce has thickened.
Notes
- Store in an airtight container in the fridge for up to 1 week.
