I am so excited about this Browned Butter Salted Chocolate Chip Cookies recipe that I have been wanting to share it with you for SO LONG now.
How have I never made a cookie recipe with corn syrup before??? It is seriously a game changer and creates the MOST soft and forever chewy cookies. I left them on the counter for 2 days straight (as an experiment) and they were STILL just as chewy the 2nd day as they were the first day.
I made this recipe three times already this week, so this is DEFINITELY my new favorite chocolate chip cookie recipe!
Having just moved to the States, I am learning all sorts of things about American cuisine.
Like how there is such thing as “Southern food” and how it is the most comforting, delicious food I have come across.
Someone in my work brought in a pecan pie: something that is not all that popular in Canada, and I think I cried a little. It was so good, I asked for the recipe immediately.
Looking at the ingredients list, I saw that corn syrup was one of the main ingredients.
Now, of course I have baked with corn syrup before. My favorite Corn Flake Bars and my Gooey Cinnamon Squares use corn syrup. But I have never known how versatile this stuff actually is until now!

Chewy Browned Butter Salted Chocolate Chip Cookies
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup brown sugar, packed
- 1/4 cup Karo® Corn Syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 3/4 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 1/2 cups chocolate chips
- sea salt
Instructions
- In a small saucepan, heat the butter over medium-low heat and continue to cook until the butter begins to smell nutty and lightly brown. Remove from the heat and allow to cool completely.
- In a large bowl, cream together the browned butter, sugar and corn syrup. Add in the egg and vanilla and mix until fully combined.
- In a separate bowl, mix together the flour, salt, and baking soda. Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the chocolate chips.
- Place the cookie dough in the fridge for at least 6 hours.
- Preheat the oven to 350˚F. Line 2 baking sheets with parchment paper.
- Using a cookie scoop, scoop the batter onto the prepared baking sheets. Bake in the preheated oven for 10-15 minutes,or until the edges are lightly brown. Allow the cookies to cool completely on the baking sheet.

They look SO chewy and delicious! Karo Corn Syrup (any corn syrup really) is super expensive in Norway, so I’ve never bought it, I’ve always used glucose syrup instead. I would love to try it someday, especially in these cookies!
