It’s that season again!
Cozy sweaters, crunchy fall leaves and alllll of the comfort food. My comfort food of choice? Soup. Always and forever.
This Chicken and Rice Soup is kind of one of those recipes where you just put everything that you have in the fridge into your saucepan and call it a soup.
Honestly, that is how most of my soup recipes are made. But this one has got to be one of my easier ones yet, using mostly pantry essentials.
What do you need to make this Chicken and Rice Soup?
Like I said: pantry essentials. And some leftover rotisserie chicken. Here’s the list for ya:
- butter
- carrots
- celery
- onion
- dried thyme
- salt & pepper
- bay leaves
- chicken broth
- dry rice
- leftover chicken
- whipping cream
- milk
- flour
If you haven’t tried adding rice to your soup, now is the time to try! It is super filling and comforting. Typically I don’t have soup as a main meal, but when I add rice to it? It keeps you satisfied as a dinner on its own.

Chicken and Rice Soup
Ingredients
- 2 Tbsp salted butter
- 2 medium carrots, peeled and diced
- 2 ribs celery, diced
- 1 medium onion, diced
- 1/2 tsp dried thyme
- salt and pepper to taste
- 1/2 tsp bay leave pieces
- 6 cups chicken broth
- 2/3 cup dry rice
- 3 cups cooked chicken, shredded
- 1/2 cup whipping cream
- 1/2 cup milk
- 1/4 cup all-purpose flour
Instructions
- In a large saucepan, heat the butter over high heat until melted. Add in the carrots, celery, onion, thyme, salt, pepper and bay leaves. Cook for around 5 minutes, or until onions are translucent.
- Mix in the chicken broth and rice, and cook for around 25 minutes. Add in the chicken and cook for around 5 minutes.
- Meanwhile, in a medium bowl, mix together the whipping cream, milk and flour. Mix into the soup and cook until the soup is thickened. Serve immediately.
