Anyone feel like they have so much work to do lately that they don’t even want to think about Thanksgiving?
Yeah.. that’s me too. But maybe because I am Canadian I can get excused from celebrating this Thanksgiving as well? I am struggling with everything I have to do lately that I don’t have the mental bandwidth to think of making a fancy elaborate dinner for Thanksgiving.
Do you think this Chicken Pasta with Greek Yogurt Sauce is acceptable Thanksgiving food?
Let me convince you by showing you how easy this dinner is to make. All you need is:
- boneless chicken breasts
- oil
- butter
- onion
- garlic
- cayenne pepper
- chicken broth
- Greek yogurt
- flour
- salt & pepper
That’s it!
Usually when I want chicken and pasta, I will make my Baked Cheesy Chicken Pasta, but even that sounded like it would take too long for me.
This pasta is ready in under 30 minutes, so this pasta recipe is perfect for a last minute dinner idea. Or when you are so tired that you don’t want to think about making food.
I know I’m a food blogger, but sometimes those days exist for me too!

Chicken Pasta with Greek Yogurt Sauce
Ingredients
- 2 medium chicken breasts, cut into chunks
- 2 Tbsp olive oil
- 2 Tbsp salted butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cayenne pepper
- 1 cup chicken broth
- 1 cup Greek yogurt
- 3 Tbsp all-purpose flour
- salt and pepper to taste
Instructions
- In a large skillet, heat the oil and butter over medium heat until butter is melted. Cook the chicken breasts until no longer pink. Transfer to a plate and set aside.
- In the same skillet, cook the onion and garlic until the onion is translucent. Add cayenne pepper. Mix in the chicken broth.
- In a small bowl, mix together the Greek yogurt and flour. Mix into the broth until thickened. Add the salt and pepper to taste. Mix in the chicken.
- Meanwhile, cook the pasta according to package directions. Mix in the sauce and serve.
