What is with the weather lately?
One day it’s extremely hot and we have the air conditioner blasting all day. The next day? Sweaters and cozy socks weather.
Not that I’m complaining. As soon as the weather cooled, I took advantage of the situation and started baking. So happy to be able to turn on my oven comfortably these days!
And what is better to bake on fall like days than comfort food?
This Chicken Skillet Pot Pie with Biscuits is the comfort food that I have been craving these days. Filled with hearty ingredients and baked in my favourite cast iron skillet, this recipe is sure to be a crowd pleaser.
What you need to make this Chicken Skillet Pot Pie with Biscuits
It’s so easy to make! All you need is:
- onions
- carrots
- potatoes
- celery
- spices (salt, pepper & thyme)
- flour
- chicken broth
- heavy cream
- chicken
- peas
- refrigerated biscuits
- egg
That’s it!
Okay, so maybe the list of ingredients looks a little long, but I promise. You probably have the majority of the ingredients in your pantry already.
This recipe is such an easier version of a regular pot pie that I am planning on making it at least once a month during the fall months.

Chicken Skillet Pot Pie with Biscuits
Ingredients
- 2 tsp olive oil
- 1 tsp dried thyme
- 1 medium onion, diced
- 2 medium carrots, peeled and chopped
- 2 medium potatoes, peeled and cubed
- 2 stalks celery, chopped
- salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 1/2 cups chicken broth
- 1/4 cup heavy cream
- 14 oz boneless chicken breasts, cubed
- 1 cup frozen peas
- 1 package refrigerated biscuits
- 1 large egg beaten
Instructions
- Preheat the oven to 400°F.
- In a cast iron skillet, heat the oil over medium heat. Mix in the thyme, onions, carrots, potatoes and celery. Stir until vegetables begin to soften, around 5 minutes. Season with salt and pepper. Mix in the flour until fully incorporated. Mix in the broth and cream until smooth.
- Add in the chicken and bring to a boil. Reduce heat and allow to simmer until thickened. Mix in the peas. Top with the biscuits in a even layer and brush with the beaten egg.
- Bake in the preheated oven for around 25 minutes, or until the biscuits are golden brown. Serve immediately.
