And for me, that means chili. So this Chipotle Chili did not disappoint.
Growing up, my dad used to make the BEST chili. We would request that he make it at LEAST once a month, and even still we couldn’t get enough.
And now that I live with my husband, it is now him that requests that I make chili at least once a month. I guess making good chili is genetic or something, because John says it is one of his favourite things that I make. Specifically, my Instant Pot Chili. That one is his all time favourite. But he says that this one is pretty close.
What do you need to make this Chipotle Chili?
Honestly, not much. All you need is:
- Italian sausage
- ground beef
- chili powder
- cumin
- corriander
- onion
- diced tomatoes
- tomato sauce
- kidney beans
- chipotle peppers (from can)
- salt and pepper
That’s it!
So as fall is approaching and cooler weathers are already here, you know I am going to be craving all of the warm comfort foods. And this one really hits the spot.

Chipotle Chili
Ingredients
- 12 oz Italian Sausage
- 1 lb ground beef
- 5 Tbsp chili powder
- 1 tsp cumin
- 1 tsp ground coriander
- 1 large onion, diced
- 2 (14.5 oz) cans diced tomatoes
- 1 (15.5 oz) can tomato sauce
- 1 (15.5 oz) can kidney beans, drained
- 2 Tbsp chipotle peppers in adobo sauce, minced
- 1 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large saucepan, cook the sausage and ground beef over medium heat until browned and crumbly. Season with chili powder, cumin and ground coriander.
- Mix in the onion until transparent, around 3-4 minutes.
- Mix in the diced tomatoes, tomato sauce, kidney beans, chipotle peppers, salt and pepper.
- Turn down the heat to low and allow to simmer for around 1 hour.

5 tbsp of cumin, seems a lot, especially as cumin can be a very dominant flavour.
