Easy Chipotle Ground Beef recipe. Made with simple ingredients, this makes a great quick and simple weeknight dinner idea.
I can’t believe we only have one week left of our road trip. It seemed to go by really quickly, but we got to do and see so many things.
We’ve got to make the most of the next week with as many hikes as we can, even if the heat in Utah/Arizona is almost unbearable.
Speaking of heat, the only added heat I want right now is in my food. NOT in my kitchen! This is why this Chipotle Ground Beef will be happening on repeat when I get back to my kitchen in Chicago.
Ready in 15 minutes. Made only on the stove, so no need to turn on the oven. Perfect comfort food for the summer.
What do you need to make Chipotle Ground Beef?
Not much at all. All you need is:
- ground beef
- onion
- cumin
- chipotle pepper in adobo sauce
- garlic
- salt and pepper
That’s it!
Typically when I want a quick and easy meal using ground beef I go for my Ground Beef and Broccoli recipe. But since it was right before we left for our trip and we had basically zero fresh vegetables, I went for a recipe using ingredients I already had on hand.
And because of that, I know that this recipe is going to be a staple at my house from now on.

Chipotle Ground Beef
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 tsp ground cumin
- 1 chipotle pepper in adobo sauce, minced
- 2 cloves garlic, minced
- salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef until no longer pink. Mix in the onion and cook for an additional 2 minutes.
- Mix in the cumin, chipotle and garlic. Cook for around 1 minute. Season with salt and pepper.
- Serve over rice and enjoy!
Notes
- This also works great for ground pork.
