Easy Chocolate Chip Coffee Coconut Muffins recipe. The coconut makes this breakfast idea into a unique nut free treat.
Since I may be moving next year, I’ve been doing these “clear out the cupboards” kind of recipes lately.
You know, ones where you look at all the ingredients that need using in your pantry and just dump them all into a cookie or a muffin?
Well these Chocolate Chip Coffee Coconut Muffins are one of those recipes.
What do you need to make these Chocolate Chip Coffee Coconut Muffins?
These ingredients are always in my cupboards, which makes this recipe good to make any time for me! All you need is:
- butter
- brown & white sugar
- eggs
- flour
- baking powder
- strong brewed coffee
- milk
- vanilla extract
- chocolate chips
- unsweetened shredded coconut
Substitutions and storing
I have made this recipe so many times, with so many different ingredient substitutions. My favourite is to replace the chocolate chips with either walnuts or pecans. You can also omit the shredded coconut if you don’t have any on hand.
As for storing these muffins, they are good stored in an airtight container for up to 4 days. If you don’t think that you will eat them in 4 days, these muffins freeze so well.
To freeze these muffins, all you need to do is place them in a freezer bag and store them in the freezer for up to 3 months. To defrost them, place the bag at room temperature for 1 hour, or microwave for around 30 seconds.

Chocolate Chip Coffee Coconut Muffins
Ingredients
- 1/2 cup salted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 3/4 cup all-purpose flour
- 1 Tbsp baking powder
- 1/2 cup strong brewed coffee
- 1/3 cup milk
- 2 tsp vanilla extract
- 1/2 cup chocolate chips
- 3/4 cup unsweetened shredded coconut
Instructions
- Preheat the oven to 375˚F. Line a muffin pan with paper liners and set aside.
- In the bowl of a stand mixer, cream together the butter and sugars until light and fluffy. Beat in the eggs one at a time.
- In a separate bowl, mix together the flour, baking powder and salt.
- In a small bowl, mix together the coffee, milk and vanilla.
- Alternately blend the coffee mixture and the flour mixture into the butter mixture.
- Fold in the chocolate chips and coconut. Divide into the prepared muffin pans and bake in the preheated oven for 25-35 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for around 5 minutes, then transfer to wire racks to cool completely.

I followed the same recipe, but replaced the chocolate chips with walnuts. It turned out delicious. The kid wants to have it regularly. The addition of shredded coconut makes it taste really good.
