I know that the holiday season is over. It seems like everyone is on a healthy eating kick this time of year after the Christmas time celebrations are over. But all I want to do is make holiday cookies and and relax with a cold glass of milk this weekend.
Unfortunately, it seems like I don’t have the time to bake cookies. I’m getting back into the swing of going to work after the break, PLUS we have a very active toddler to look after. It has to be quick and easy recipes from here on out. And every day after work, I crave a sweet and salty treat to satisfy my hunger until dinnertime. I actually bought a large box of ritz crackers from Costco the other day so that I could melt chocolate after work and dip the crackers in there. But even that is too much effort these days.
This is where these Chocolate Covered Peanut Butter Ritz come in. This sweet and salty snack combines buttery crackers with a tablespoon of peanut butter, then covered in a rich chocolate coating. It is just what I need after a long day at work.
Chocolate Covered Peanut Butter Ritz Ingredients
You just need 4 simple ingredients to make these chocolate peanut butter crackers. All you need is:
- 24 Ritz crackers (a little under a sleeve of ritz crackers)
- 12 Tbsp peanut butter (this is 3/4 cup peanut butter)
- semi-sweet chocolate chips
- coconut oil
That’s it!
Tips & Variations
Can I use canola oil instead of coconut oil? Unfortunately, coconut oil is the only type of oil that works with this recipe. If you wanted, you could use butter in place of the coconut oil as both harden when cold.
Switch up the peanut butter. You can use any type of nut butter to replace the creamy peanut butter filling. I love almond butter and cashew butter as a replacement. You could even replace it with cookie butter as well. I’m not judging.
Get creative with the melted chocolate. Changing out the type of chocolate can give you new variations to this recipe that you will love. Instead of using semisweet chocolate chips, try using either dark chocolate, milk chocolate or white chocolate chips. If you don’t have coconut oil on hand, try using candy melts!
Storing these chocolate peanut butter ritz crackers. You can store this no bake treat in an airtight container at room temperature for up to 1 week. They also store really well in the freezer. I love making a double batch so that I can enjoy one batch now, and freeze the other batch for later.

Chocolate Covered Peanut Butter Ritz
Ingredients
- 24 Ritz crackers
- 12 Tbsp peanut butter
- 2/3 cup chocolate chips
- 2 tsp coconut oil
Instructions
- Line a baking sheet with parchment paper.
- Spread 1 Tbsp of peanut butter onto a Ritz cracker. Sandwich another cracker on top and place on the baking sheet. Repeat with the remaining crackers.
- In a small microwave safe bowl, melt the chocolate chips and the coconut oil in the microwave in 30 second intervals, mixing until smooth.
- Dip the Ritz sandwiches into the melted chocolate, then return to the baking sheet. Repeat for the remaining sandwiches.
- Place in the fridge until the chocolate is hardened.
