Easy Chocolate Monster Cookies recipe. Made with candy eyeballs, this makes a great last minute dessert idea for any Halloween party.
I feel like I say this after every month, but seriously. Where does the time go?
It seems like I started my new job just days ago. But now it’s almost Halloween?? How did this happen?
But now I am realizing that, less than 1 week away from Halloween, I haven’t shared any Halloween themed recipes with you.
This has to change.
Okay. So these Chocolate Monster Cookies may be the easiest, last minute recipe ever. But I am SURE that I am not the only one swamped with work now. We need something easy for a change.
I love the brownie-like texture that these cookies have, but to be very honest, you can use whatever cookie recipe you like.
And if you aren’t a fan of (or can’t find) the bloody candy eyes, use whatever you like! M&Ms, chocolate chips, mini Oreos.. you get the picture.
I made these for my students a couple of weeks back, and they couldn’t stop eating them!
Not only because they are are so cute. And because, who can say no to free cookies. But really because they are so dang good!

I am going to TRY to post at least one more Halloween recipe before Thursday, but I can’t make any promises. This week has been extremely busy, so whatever I will be making will have to be extremely simple.
Like, almost easier to make than these cookies.

Chocolate Monster Cookies
Ingredients
- 2 cups granulated sugar
- 3/4 cup avocado oil
- 4 large eggs
- 2 tsp vanilla extract
- 3/4 cup unsweetened cocoa powder
- 2 1/3 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- candy eyeballs
Instructions
- In the bowl of a stand mixer, mix together the sugar and oil. Add in the eggs one at a time, mixing until fully incorporated. Stir in the vanilla.
- In a seperate bowl, mix together the cocoa powder, flour, baking powder, salt. Slowly add into the wet ingredients, mixing until fully combined.
- Cover, and place in the refrigerator for at least 6 hours.
- Preheat the oven to 350˚F. Line 2 cookie sheet with parchment paper.
- Using a cookie scoop, scoop the cookie dough onto the cookie sheets. Bake in the preheated oven for 12-14 minutes. Remove from oven and allow to cool on cookie sheet for around 5 minute. While cooling, press the candy eyeballs into the cookies. After 5 minutes, transfer to wire racks to cool completely.
Notes
- Enjoy all year round by removing the candy eyeballs.
- Store in an airtight container for up to 2-3 weeks.
