Finally! A Christmas recipe on the blog this year!!
How has time gone by so quickly? It feels like December just started yesterday. But instead, there is a little over ONE WEEK before Christmas. And I am not ready. Not in the least.
BUT, if all else fails, I always have this Christmas Coconut Flour Cookie Dough Truffles recipe in my back pocket. You know, for any presents I forgot to buy. And I am sure I forgot someone. This year has been so busy that I have been forgetting things left, right and centre.
I deserve a vacation. Only 4 more work days until the holidays. Then I am free to relax, rest and recharge for the next year.
That is, after I finish marking all of the tests that we are giving on the last day of school. 😣
Me and John are leaving to Vancouver on Saturday for the holidays. Since the last day of school for me is on Thursday, we are going to spend all Friday at Cora’s – our favourite breakfast joint – for what we like to call a “marking party”. He has a whole first year calculus class’ final exams to mark.. and I have 4 classes of tests to mark.
I hope we can finish on Friday, because I do NOT think we have enough room for the tests in our suitcases. We are packing quite a lot of presents in our suitcases already, we are having a hard time fitting our clothes in there, let alone additional tests.
I will need all the energy I can get on Friday. Thinking of bringing these along with me to this marking party.
These are so great to put together as a last minute Christmas dessert recipe. They are small, so they are perfect for bringing to a Christmas party, and they are so super cute that it looks like you spent forever making them. When in reality, putting all of it together takes less than 15 minutes.
The hardest part about this recipe is waiting for the chocolate to harden!
I have been snacking on these cookie dough truffles all night that I am actually not sure if they will last until Friday. I guess that is just an excuse for me to make some more!

Christmas Coconut Flour Cookie Dough Truffles
Ingredients
- 3/4 cup whipping cream
- 1/4 cup stevia
- 3/4 cup coconut flour
- 1/2 cup butter, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp maple syrup
- red food coloring
- 1/3 cup white chocolate chips
- 1 cup red melting chocolate
- Christmas sprinkles
Instructions
- Line a baking sheet with parchment paper. Set aside.
- In a medium bowl, mix together the whipping cream, stevia, coconut flour, butter, vanilla, salt and maple syrup until fully combined. Add the red food colouring, a couple of drops at a time, mixing until you reach your desired colour.
- Fold in the white chocolate chips.
- Create 1 Tbsp (or bigger if you want!) balls of cookie dough with your hands, and place on the prepared baking sheet. Place in the freezer.
- Meanwhile, in a microwave safe bowl, melt the red melting chocolate in 30 second intervals, mixing after each interval until smooth.
- Remove cookie dough from the freezer. Place a cookie dough ball on a fork, dip it in the melted chocolate and turn to coat. Shake off excess chocolate, and return to parchment paper. Repeat with all of the cookie dough balls.
- Top with the Christmas sprinkles, then return to the freezer until the chocolate hardens. Store in an airtight container in the fridge or freezer.
