Yesterday was the last day of school. For a teacher, just like for a student, that means recycling all of our papers and miscellaneous junk in and around our desks. And then going out to celebrate with our friends.
We stayed out LATE last night, letting loose and being thankful that we have the entire summer to relax and rest before we begin another long and work-filled year.
So thankful for being a teacher, but the school year is hard work! We deserve this break!
So today, I told John that I was going to treat myself and sleep in. I deserve it, right? He told me that I was going to regret it and feel awful about myself in the morning, so he wasn’t going to let me go through with it.
Next morning I wake up with no alarm and think “wow! I must be really good at waking up, even without alarms”. Then I turn around and see that John is gone.
This NEVER happens, because I am always the early riser. So I look at my watch, and sure enough, it is noon. I slept in until NOON!!
For once in my life, I didn’t freak out. I didn’t say “where has my day gone??” I didn’t feel guilty at all. It’s the summer, and I really deserved the sleep.
But of course, John didn’t eat breakfast yet. I seriously think that this guy would starve if I wasn’t there to feed him. Which is why I am kind of thankful that he is going to live with his mom next year instead of living on his own when he moves to Vancouver for a year.
So now I need to make a quick and easy brunch recipe on a minutes notice.
What you need to make Churro Crescent Rolls
Only 3 ingredients! All you need is:
- sugar
- cinnamon
- refrigerated crescent rolls

Churro Crescent Rolls
Ingredients
- 1/2 cup granulated sugar
- 2 tsp ground cinnamon
- 1 can Pillsbury crescent rolls
Instructions
- Preheat the oven to 350˚F. Line a baking sheet with parchment paper or a silicone mat. Set aside.
- In a small bowl, mix together the sugar and cinnamon.
- Unwrap and separate the crescent rolls into triangles. Sprinkle 1 tsp cinnamon sugar into each triangle and roll into crescent rolls. Roll each crescent roll in cinnamon sugar and place on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until golden brown. Allow to cool slightly before eating.

I know how you feel – I feel guilty when I sleep in too, BUT you must have been super exhausted and your body and mind needed the rest!! I hope your summer is going well and you are able to relax before hitting it hard again in the fall! These churro crescent rolls – ok, YUM!! What a perfect brunch item! And so simple!
