Am I overdoing it with all of these chia seed pudding recipes? First it was the matcha and vanilla chia seed pudding, and it all kind of spiraled from there.
And this was all because I read about the benefits of chia seeds in a grocery store, and bought them on an impulse buy. I mean, most stores put candy and pop right beside the checkout, and I can almost always resist it. But wave chia seeds in front of me? Apparently I cave.
But this experimenting with chia seeds journey has been a very fun and delicious one. So far I have only made puddings with them, but I would LOVE some suggestions on what to do with them next. I have been thinking of putting it in smoothies, but that is about as creative as I’m getting right now.
And if you think that I’m getting all healthy on you recently, it’s just because I have been neglecting to take pictures of the cakes I have been making. I recently made one of the most delicious chocolate cakes I have ever made, but of course, I forgot to take a picture of it, and it was gone by the end of the day. #bloggerfail.
But at least I have this easy recipe. The cinnamon definitely adds an extra kick to an already delicious chia seed pudding. I love it!
Cinnamon Vanilla Chia Seed Pudding Ingredients
You just need 5 simple ingredients to make this cinnamon vanilla chia pudding. All you need is:
- whole milk
- chia seeds
- sugar
- pure vanilla extract
- ground cinnamon
Tips
Storage: Store this chia pudding in an airtight container (such as a mason jar) in the fridge for up to 5 days.
Top with your favorite toppings. This chia pudding is the perfect base for your favorite toppings. I love adding fresh berries, cacao nibs, granola or hemp seeds, but you can add your favorite fruit or whatever else you have on hand.
Variations
Chocolate Chia Pudding: Mix in some cocoa powder and top with chocolate chips for the perfect healthy breakfast idea.
Make it vegan. Swap out the milk for vegan milk. I love using oat milk or cashew milk to make it the same consistency as with regular milk. If you wanted a more creamy texture use full fat coconut milk, and if you want a thinner texture use unsweetened almond milk.
Add more protein. You can actually experiment with adding different flavored protein powders into this chia pudding. Or, you can mix in some collagen peptides if you didn’t want to add a different flavor to this pudding.

Cinnamon-Vanilla Chia Seed Pudding
Ingredients
- 1 cup milk of choice
- 1/3 cup chia seeds
- 2 tsp granulated sugar
- 1 tsp pure vanilla extract
- 1/2 tsp ground cinnamon
Instructions
- In a small bowl, mix together all the ingredients, and refrigerate until it reaches your desired thickness, about 2 hours or even overnight.

If you eat chia seeds dry, it tastes kind of like poppy seeds. If you make them in these puddings..the closest thing I could compare them to is tapioca pearls

There can never be enough chia seed pudding recipes, and this sounds delightful! I gotta top up on chia seeds, was looking for them the other day, but could only find them in the shop overpriced :S Where do you buy yours?
You can also add them to overnight oats for a little more of a chia consistency, AND you can cook up berried or fruit with chia seeds and a little sweetener and make home made jam 😀 x

It depends on where you live. I live in Canada, and I bought it at Winners, where it's a bit cheaper than in grocery stores. But it's true..most places they are really expensive.
