Guys! I have started taking weight lifting classes!!
What? Scrawny old me? Me whose nickname was “Boney-McBonebone Von Bones-a-lot” because I have always been so skinny?
Well now I don’t want to be known as the “skinny girl” (not that I ever really wanted to be known as that). I want to be known as being strong. And my shaky sore muscles will be an indicator that I am making progress!!
And if you didn’t want to just eat them on their own, putting them in this super easy and super healthy parfait is one of my favorite ways to get your healthy dose of Clif Bars!
This is what I have been having as a post workout snack for the past couple of days, and I have been loving every bite! The peanut butter helps maximize muscle repair and recovery, the potassium in the bananas will replenish the potassium reserves that are running low after a good workout, and the Clif Bars? Well, they are just the healthy cherry atop the healthy cake so to speak!
This parfait paired with my weight lifting classes is sure to get me ready for a new week of teaching. Don’t you think?
Clif Bar Parfait
Ingredients
- 1 medium banana, cut into coins and frozen
- 1 Tbsp smooth peanut butter
- 1/2 tsp vanilla
- 1 Clif Bar, cut into chunks
Instructions
- In a food processor*, pulse the banana, peanut butter and vanilla until smooth.
- Pour into a bowl and top with the Clif Bar.
