I am writing this to you the morning before I am to leave for Vancouver, just trying to put off giving the place a good clean. You see, putting off cleaning is one of my strong suits. At least I’m doing something productive, right?
This year, we are only going to be in Vancouver for 2 weeks. Which means we aren’t too concerned about eating everything in our fridge, but we are trying our best.
This morning, all we have to eat is the carrot cake I made for John’s birthday, some cheese and some bread. And here I am making more food for us. But at least I can use this smooth coconut butter on the bread. AND scooped directly into my mouth, aka: the best way to enjoy coconut butter.
This recipe is stupid simple, and is ready in less time than it takes to go to the grocery store and buy it. AND it is wayy cheaper than a coconut butter jar from stores. On Amazon, a jar of raw coconut butter runs for around $13. In comparison, the amount of shredded coconut I used might be around $5 MAX.
I also find it very hard to find this butter around where I live. So this fact along with the hefty cost of a jar of coconut butter lead me to make it myself. And I hope you try it too!
What do you need to make the best Coconut Butter?
All you need to make this creamy coconut butter recipe is ONE INGREDIENT. Yup, you heard that right. ONE! And the only ingredient you need is:
- unsweetened shredded coconut

- food processor (or high-powered blender)
- rubber spatula
- airtight container (use an old coconut butter jar, or a mason jar)
Frequently asked questions
What is the difference between coconut oil and coconut butter? Virgin coconut oil is mainly used for cooking or baking, whereas coconut butter is used for spreading (but also can be used for cooking). Melted coconut oil has a high smoke point, making it ideal for frying. The texture is also different. The smooth butter will have a more creamy texture, whereas coconut oil is semi-soft at room temperature.
How do you store it? You can store the butter in an airtight container (preferably a glass container) at room temperature. No need to make it in smaller batches, because this will last for at least 3 months if not more.
Don’t have a food processor? For extra creamy butter, blending the unsweetened coconut shreds for 5-10 minutes a good quality high-speed blender works well.
Can you use something else instead of shredded coconut? I have only used shredded coconut, so I can’t speak to if it works with coconut flakes, coconut chips or fresh coconut meat. If you try it please let me know in the comments!
Can you replace regular butter with coconut butter? They are a little bit different. First of all, the melting point of regular butter 90°F whereas for the coconut version it is around 77°F. The coconut flavor in coconut butter is also quite strong, but I suppose for coconut lovers this is no problem.

Ingredients
- unsweetened shredded coconut (the more the better)
Instructions
- In a food processor, pulse the unsweetened shredded coconut until smooth. This will take around 10 minutes. There will be a point where the mixture will look like a ball rolling around and that is perfectly normal. Just wait longer until it is of a spreadable consistency.
- Store in an airtight container.
Notes
- You can replace the unsweetened shredded coconut for sweetened coconut if you want a sweet spread.
