Surprise surprise, I am making another oatmeal recipe.
I don’t know why, but I can’t seem to stop making oatmeal. Even in the hot summer months. I can’t get enough.
And cupcake oatmeals have become my new favourite.
What do you need to make this Coconut Cupcake Oatmeal?
I know I always say it’s pantry staples, but this one is definitely pantry staples. All you need is:
- unsweetened coconut milk (from carton NOT can)
- oats
- chia seeds
- unsweetened shredded coconut
- cream cheese
- powdered sugar
- butter
- vanilla extract
That’s it!

Coconut Cupcake Oatmeal
Ingredients
Oatmeal
- 1 cup unsweetened coconut milk (from the carton NOT from the can)
- 1/2 cup rolled oats
- 1 Tbsp chia seeds
- 1 Tbsp unsweetened shredded coconut
Frosting
- 0.5 oz cream cheese, softened
- 0.5 oz unsalted butter, softened
- 1/3 cup powdered sugar
- 3/4 tsp milk of choice
- 1/4 tsp vanilla extract
Instructions
- Heat the coconut milk in a small saucepan. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Remove from heat and mix in the shredded coconut. Set aside.
- Meanwhile, in a small bowl, mix together the frosting ingredients until smooth. Set aside.
- Pour the oatmeal into a bowl, and top with the frosting. Sprinkle with additional shredded coconut if desired.
Notes
- This frosting recipe makes quite a lot for one bowl. Save some for later by storing it in an airtight container in the fridge.
