Finally turning on my oven. It’s September. It is time.
And of course the first order of business is to bake with chocolate. Brownies being the first thing that comes to mind.
These Coconut Oil Brownies made a great first recipe to turn on my oven to.
Recently, I have been really obsessed with my Nutella Shortbread Brownies. That was my go-to brownies recipe, back when I used to turn on the oven.
But I’ve been wanting to do a healthier take on brownies lately. Making brownies with coconut oil counts as a healthier brownie, right??
One of my favourite things about this recipe is how easy it is to make. All you need is:
- chocolate chips
- coconut oil
- sugar
- eggs
- vanilla
- flour
- baking powder
- salt
That’s it!
If there is one thing I’ll be turning on my oven for, it’s for brownies.
And cookies, and cakes, and blondies and…

Coconut Oil Brownies
Ingredients
- 2 oz semi-sweet chocolate chips
- 1/2 cup coconut oil
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 350˚F. Line an 8 inch square pan with parchment paper and set aside.
- In a microwave safe bowl, add the chocolate chips and coconut oil. Microwave in 30 second intervals, mixing until smooth.
- Mix in the sugar. Add the eggs one at a time, mixing until combined. Mix in the vanilla extract. Fold in the flour, baking powder and salt.
- Pour the batter into the prepared pan and bake in the preheated oven for around 30 minutes, or until a toothpick inserted comes out clean. Allow to cool completely before cutting into squares.
